Tried it for the first time (ostrich ground meat) and it tastes like Prime beef. I cooked it in bacon lard, Italian seasoning and used it in a meat red sauce. Soooo good.
I'm a South African and I have Ostrich at least once or twice a month. I've always felt that it's a Much richer beef flavor and as tender as a filet mignon. It really is a delicacy though - it's delicious, but too much and you start to feel a bit sick (like lamb as well)
Commenting here from Cape Town, South Africa - we used to eat ostrich quite often, definitely a strong gamey flavour which you get used to, the fillet should be cooked rare for best results IMHO. Ostrich is a very lean meat in general, over here you will find that ostrich sausages and ground ostrich often have lamb fat added to make up for the leanness.
In South Africa it's often made into biltong (similar to jerky but hung and air dried in strips cut along the grain) which intensifies the flavor and South Africans love it.
Might be better to soak in salt water or buttermilk to get rid of the gamey flavor. That's what I do with wild venison. Always love your videos. Keep them coming!
Anything that get that flavor away will make it better. The main problem for me was the after taste.. Hard uncooked turkey flavor that I'm not sure anything can take away from that meat.

Then a coworker who had an ostrich farm gave me about 10lbs of meat and I made jerky with it. Might have been the best jerky I ever made. I have ostrich in the freezer. ostrich is very good & if you prepare it like you would a steak, it taste just like it. I hate the fact this bird isn't commonly consumed & that affects it's price.
We buy it here, but I make sandwiches with it.! If I remember correctly, a couple years back you went hunting. How about doing some videos on duck, goose, pheasant or whatever game birds you can get in your bag..?

I tried it, seasoned just with himalayan salt, one minute from each side on hot cast iron pan with tallow and it was so delicious in its blue rare state. Almost raw meat but with crispy crust and big melting piece of butter on top of it.

Careful to not overcook ostrich meat or it turns to rubber. We have it regularly; medallions, burgers and mince. Also sometimes have the neck in stews or in soup. Love it!
I'll take ostrich over beef (or buffalo) any day of the week. There was a restaurant I used to go to all the time in Fort Lauderdale (now closed) that used to serve it and it was amazing! California Grill at Disney World often serves it also.

I would spread good amount of mustard on it, throw a rub and then wrap a bacon around it. I dont know if that gonna change anything but I saw people removing the gamey flavour using mustard and bacon just because it makes everything better.

I've given Ostrich a couple of chances. It's like a combination of gamie, metallic/liver, and a bit of a bird flavor. I noticed your description of beef and chicken, which I would say duck is more in that range, where Ostrich is too metallic.

I've just recently tried ostrich as well, I patted dry,I seared in butter. Let rest till cool to touch, then cooked to temp with salt and pepper and a bit of Lawry's for seasoning. It took me a couple tries to avoid it getting too tough.

I have had it as a burger an the spices were just your basic three black pepper salt an garlic powder an it tasted like a super lean beef burger so not sure if the rub did it in.
mmmm The main issue there was the after taste... rub would influence the flavor of the meat not the after taste. It tasted like raw turkey if that makes sense... 😂😂 weird stuff!

Ostrich is so good man! It's an acquired taste but so good and much healthier than beef! If you're trying to lose weight and/ or put on muscle, ostrich is a much better option than beef AND ostrich is arguably better than chicken! Has a better gram of protein per calorie ratio

It taste very good, but I like kangaroo and zebra even more. The latter does better on the health scale as well. Horse meat is good and plenty over here.
Sorry I am a bit late on this video. I am a few days behind been working my arse off. When I saw the fillet it looked similar to elk to me. I think I would have cooked it a bit more done since it is a bird. Probably at least 130 degrees. After your reaction will never spend money on this. Now if we can just get you some lion meat. It would be epic.
There are many things that can be done differently and may result in better taste but after that I'm not sure I'll try any other recipe with ostrich soon. 😀😀 Thank you so much brother!
My experience eating ostrich was a lot better than his. It was like tender beef with just a little gamey-ness. You might not want to cook it too well done, I've been told it toughens.

You had to use as much seasoning as possible to make it decent, including tallow which makes anything taste better.

Bro you have to wash that meat in some fresh lime juice and marinate it for at least 2 hours before you cook that thing for it to taste good

Give it a try anyway. I didn't have Ninja's bad experience... thought it to be tender, very mildly gamey, and worth the eating.

It's not gamey like moose, or robust like elk or bison. Ostrich will take on the flavour of any marinade.

I have had it as a burger an the spices were just your basic three black pepper salt an garlic powder an it tasted like a super lean beef burger so not sure if the rub did it in.
mmmm The main issue there was the after taste... rub would influence the flavor of the meat not the after taste. It tasted like raw turkey if that makes sense... 😂😂 weird stuff!

I have tried ostrich last year, along with kangaroo and zebra... I think my favorite was kangaroo overall, but ostrich was a close second!

it is recommended to use a lot of spices and cook as a regular steak... There has to be more tests done here! 😀😀

Ostrich is so good man! It's an acquired taste but so good and much healthier than beef! If you're trying to lose weight and/ or put on muscle, ostrich is a much better option than beef AND ostrich is arguably better than chicken! Has a better gram of protein per calorie ratio

I’ve done ostrich in my sous vide. I cooked it to 125 for 2 hours and finished it with a quick sear.
How was it?
It taste very good, but I like kangaroo and zebra even more. The latter does better on the health scale as well. Horse meat is good and plenty over here.
Sorry I am a bit late on this video. I am a few days behind been working my arse off. When I saw the fillet it looked similar to elk to me. I think I would have cooked it a bit more done since it is a bird. Probably at least 130 degrees. After your reaction will never spend money on this. Now if we can just get you some lion meat. It would be epic.
There are many things that can be done differently and may result in better taste but after that I'm not sure I'll try any other recipe with ostrich soon. 😀😀 Thank you so much brother!
My experience eating ostrich was a lot better than his. It was like tender beef with just a little gamey-ness. You might not want to cook it too well done, I've been told it toughens.
