  • You know that in this channel we cook it all but I think this time we went too far... Yep, we are cooking ostrich today! Commercial farming for ostrich became widespread during the 1970s. Common ostriches are so adaptable that they can be farmed in climates ranging from South Africa to Alaska.

      Salty Tales I mean there are people who pay to fly to Africa for the exact reason of getting lion meat or similar. Depending on laws when borders reopen you might be able to help pay for someone’s travel in exchange for a steak

    Tried it for the first time (ostrich ground meat) and it tastes like Prime beef. I cooked it in bacon lard, Italian seasoning and used it in a meat red sauce. Soooo good.

    Commenting here from Cape Town, South Africa - we used to eat ostrich quite often, definitely a strong gamey flavour which you get used to, the fillet should be cooked rare for best results IMHO. Ostrich is a very lean meat in general, over here you will find that ostrich sausages and ground ostrich often have lamb fat added to make up for the leanness.

    Might be better to soak in salt water or buttermilk to get rid of the gamey flavor. That's what I do with wild venison. Always love your videos. Keep them coming!

      Anything that get that flavor away will make it better. The main problem for me was the after taste.. Hard uncooked turkey flavor that I'm not sure anything can take away from that meat.

    In South Africa it's often made into biltong (similar to jerky but hung and air dried in strips cut along the grain) which intensifies the flavor and South Africans love it.

    I'm a South African and I have Ostrich at least once or twice a month. I've always felt that it's a Much richer beef flavor and as tender as a filet mignon. It really is a delicacy though - it's delicious, but too much and you start to feel a bit sick (like lamb as well)

    You did a good job seasoning it to your taste, too bad you didn't really like it. To each their own I guess, I personally love ostrich meat. I find it much more enjoyable than beef fillet for example.

    Please do a video about cooking a guinea hen. I ate them several times when I was a kid and loved the taste and texture. I felt they were better than chicken.

    I'm really surprised. I've had ostrich many times, mostly at a Mexican restaurant prepared like carne asada or strip steak. Then a coworker who had an ostrich farm gave me about 10lbs of meat and I made jerky with it. Might have been the best jerky I ever made. Sorry you didn't like it, but I haven't tasted the strong game flavor. Or maybe I had it with so many other flavors I didn't notice. I enjoyed this video nonetheless, thanks.

      I had it for a first time at a restaurant... I LOVED it immediately. Mine was not very gamey at all, and was wonderfully tender and tasty. (Maybe there was something wrong with your source?) Unfortunately I've only run into it twice, since.

    I remember back in the 90s down south there were ostrich farms popping up everywhere it was the new big thing I wonder what happened because you hardly see them anymore I even saw it in select stores on occasion it was pricey though.

      No guys. I just don't get this. Ostrich can be delicious. Must have cooked it wrong or something was off because I eat it and its up there with Waygu. Don't understand how the cut you ate was so bad?? I have eaten it many times and it was delicious

    I would spread good amount of mustard on it, throw a rub and then wrap a bacon around it. I dont know if that gonna change anything but I saw people removing the gamey flavour using mustard and bacon just because it makes everything better.

    We buy it here, but I make sandwiches with it.! If I remember correctly, a couple years back you went hunting. How about doing some videos on duck, goose, pheasant or whatever game birds you can get in your bag..?

    Emu is pretty good, I've had burgers and the "turkey legs" they sell at Disney world are emu I'm pretty sure and it taste just like a baked ham

    I tried Ostrich B4 it's not for everybody! But it does have a good flavor for those of us looking for adventure! I only had the jerky. Part was good the other was gamey! I enjoyed both! I wish I could have it cooked!! But I enjoyed your guys opinion!! 😀😀😀 Thanks for the video 👍👍

    I tried it, seasoned just with himalayan salt, one minute from each side on hot cast iron pan with tallow and it was so delicious in its blue rare state. Almost raw meat but with crispy crust and big melting piece of butter on top of it.

      You had to use as much seasoning as possible to make it decent, including tallow which makes anything taste better.

    Hiya, Ninja. Glad I found your channel, so I subbed. Sorry the ostrich was to gamey for you. Maybe next time you try it, you can marinade it in buttermilk or milk? I've done that with wild game before, and it works to take the gamey taste out. Also used it the one time I tried grilling shark.

    Ninja they raised ostrich near me in Arkansas and we butchered one and it was amazing as stirfry so please once again do a video where you make ostrich stirfry I promise you it is amazing

    I've just recently tried ostrich as well, I patted dry,I seared in butter. Let rest till cool to touch, then cooked to temp with salt and pepper and a bit of Lawry's for seasoning. It took me a couple tries to avoid it getting too tough.

    It's like wine, it's acquired taste. You should try Ostrich burgers. Ostrich is good for you, super lean and so many options. Love Ostrich Burgers and Ostrich Steak. Ostrich cooks really quickly. Which steak did you buy? Maybe you should make an Ostrich steak with Ostrich egg for breakfast. Love Miss Ninja impression of deeeelicious.

    Careful to not overcook ostrich meat or it turns to rubber. We have it regularly; medallions, burgers and mince. Also sometimes have the neck in stews or in soup. Love it!

    I once visited an ostrich farm near my home. I wanted to pet the bird and the owner said, "Do what you want." I climbed into its pen and when the bird spotted me it went crazy and started chasing me which made the owner burst out laughing and say, "You women want to make a pet out of everything."

    I'll take ostrich over beef (or buffalo) any day of the week. There was a restaurant I used to go to all the time in Fort Lauderdale (now closed) that used to serve it and it was amazing! California Grill at Disney World often serves it also.

    I have had it as a burger an the spices were just your basic three black pepper salt an garlic powder an it tasted like a super lean beef burger so not sure if the rub did it in.

      mmmm The main issue there was the after taste... rub would influence the flavor of the meat not the after taste. It tasted like raw turkey if that makes sense... 😂😂 weird stuff!

    We get ostrich at the local butcher, I like my beef stakes better than ostritch steaks but I've started using ostrich for jerky and I'm starting to enjoy it more than beef jerkey

    I’ve tried ostrich once. It wasn’t overly gamy in my opinion. I really enjoyed it but I wouldn’t pay over $10 lb

    I've given Ostrich a couple of chances. It's like a combination of gamie, metallic/liver, and a bit of a bird flavor.
    I noticed your description of beef and chicken, which I would say duck is more in that range, where Ostrich is too metallic.

      @@SaltyTales I love duck too. It's like a beefed up chicken, in a good way. Ostrich is a whole other weird meat. I find it perplexing how they charge high end prices for something that closely resembles metallic liver in flavor.

    Ostrich is so good man! It's an acquired taste but so good and much healthier than beef! If you're trying to lose weight and/ or put on muscle, ostrich is a much better option than beef AND ostrich is arguably better than chicken! Has a better gram of protein per calorie ratio

    Sorry I am a bit late on this video. I am a few days behind been working my arse off. When I saw the fillet it looked similar to elk to me. I think I would have cooked it a bit more done since it is a bird. Probably at least 130 degrees. After your reaction will never spend money on this. Now if we can just get you some lion meat. It would be epic.

      There are many things that can be done differently and may result in better taste but after that I'm not sure I'll try any other recipe with ostrich soon. 😀😀 Thank you so much brother!

      My experience eating ostrich was a lot better than his. It was like tender beef with just a little gamey-ness. You might not want to cook it too well done, I've been told it toughens.

    It taste very good, but I like kangaroo and zebra even more. The latter does better on the health scale as well. Horse meat is good and plenty over here.

    Ok.. me neighbor for across the street went to culinary school and he said any meat that is gamey you soak it in milk. I guess the milk breaks down the fats ( where the gameyness comes from) for at least overnight. Excuse my spending but I believe that milk cuts down gamey taste.

    I’d have to disagree. Ostrich taste nothing like Turkey….it’s a more tender version of beef, similar to Elk. Delicious! Wat he’d this video before I cooked my dinner last night & was terrified! Went ahead & prepared & we loved it!
