You know, we moved to Florida from CA and haven’t been able to find the same Mexican flavors we are used to and enjoy the most. The restaurants here in my area mostly have Cuban, Brazilian, and other South American influences in flavor. We miss the true Mexican flavor. Your recipes are sooo good and exactly what we miss! I have the same problem in northern VA. I am originally from AZ and lived in San Diego for several years before moving to VA and although Mexican food is popular here, it's missing the Sonoran influence of the Mexican food I prefer.
I'm looking forward to trying these. I just have to tell you that i recently made your chile relleno casserole and it is by far one of the best things i've made in a very long time. I took some to my mother who is homebound and she just raved about it!! She made me promise to make it again and bring her some. Every recipe I"ve ever tried of yours turns out amazing!! Thank you!!

I've seen the mini version sopepillas(sic) I believe. But these are amazing looking! The cooking process reminds me of those crumpet/muffin things from UK, but the texture on these looks much more pleasant.
Wow I was not expecting the pinching techique! That is so cool. I have pinched/fluted the edges on dough before baking but I never knew you could flute things *after* baking. They're like small tarts in a way too. Thank you😊
I definitely will be making the sopes. I just got done making for the second time the chorizo. I made a mix of two pounds of pork meat and one pound of beef meat. I hope it comes out good.
