Then I bought a scale and weighed my food, I was shocked to learn that I used to eat like two servings of pasta. I gotta say potatoes were more shocking to me bc I used to think perhaps two not so big potatoes were just right until I weighed them. I will never look at restaurant portions the same, they are just way too big for one person!

Take this and apply it to the weight of the potato, .74 x 355, to get the correct calories, which is about 264 calories.
Its not saying that the potato weighs that much. It’s saying a serving weights that much. The potato you picked out of that bag is over 2 servings. But yea have a scale is important too. But so is understanding nutrition labels

Easiest way would be to cut up the potato into cubes then you can get a accurate measurement

I eat 6 or so potatoes daily, and I'm losing weight. I don't cook them with oil or serve them with animal products (high in fat).
There’s a difference in cal/weight based on wether it’s cooked or not
There may be some small difference, but it’s not going to be enough to decrease the weight of the potato by over half
