    For someone in the wine business what Jennifer speaks of is incredibly important...if wine lovers (or potential wine lovers) develop more sophisticated palates (or per her title - unlock the hidden power of one's palate) generally speaking more good wine should be sold to people who have developed a greater love for wine.

      true, but very hard to get large middle section of society who love their own mediocrity to think of something like that in a positive light

    In wine we only have sweet, sour and bitter??? Have you never tasted umami in an Amontillado or a salty Etna bianco?
