Something about cooking over an open fire that gives an extra element of flavor to food. So glad you could share this adventure with your beautiful wife! I can see how happy you were on this trip.
Funny I was thinking about that as I cooked this meal. I noticed little specks of charred wood and ash were constantly floating up on the rising heat and falling into the food - my thought was that this must be one of the reasons food tastes good on an open fire - even if it's in a pan

haha thanks! I just started my channel recently :) In regards to recipe, I believe Thais was kindove winging it. She was making polenta (corn meal) which works really well as a backcountry meal and can mix well with an assortment of vegetables.

Maxim was smart to start me out with comfortable trips first couple of times - no bugs, perfect moderate fall weather, no exhausting hikes/paddles/portages, lots of good food and cozy "creature comforts", etc... Hope you guys go on a nice trip soon and that your wife loves it!

Hi Matthew. I made polenta as a base - cornmeal with salt, cheese, and butter thickened in boiling water. A wonderful alternative to pasta - the package recommends 20 minutes of cooking but I take it off after 2 minutes and it works perfectly (though I've found some brands of cornmeal don't do as well - I recommend the commonly found "unico" brand). The sauce was made from all the ingredients you see on the table - basically a a chunky tomatoe sauce with cilantro and salami. My own invention but I'm sure countless other people make something similar in polenta eating countries. Cheers and thank you for your kind comment.
I miss hearing the whip poor will at night (moved to city) and they can be a bit relentless. Just have to stop trying to listen to it. Like bull frogs, another night sound I never hear anymore. Used to put me to sleep, just have to stop listening and kind of sink into it.

This looks like a gem of a spot. The whole video is really well put together. Where is it exactly? I noticed a yellow pelican case. lol. I have the same one, and it floats around in the gear sprawl in my canoe. My friends hate it. It's been a bone of contention for years. lol. Wouldn't go without it though.
