The name of the kata is Suparimpei (Naha-te origin). Perhaps the performance is Shito-Ryu.

      Sierra Johnson
no... sanchin and suparimpei are totally different. Suparimpei starts with the sanchin stance but the two are different.. suparimpei has 108 steps in total. sanchin is not a competition kata. it is done with controlled breathing and tension. it is more of a cardiovascular exercise.

Why do they do katas instead of fighting each other? Anybody know?

Sometimes they do, but the short answer is that these martial artists often don't know how to fight and their "fights" usually resemble dancing, more than a real combat. You can look them up and honestly ask yourself, whether you think most of them could handle themselves in a street fight against a big thug from the gym, or in a war-context fist fight.
I am not a troll btw, I have done many years of Real fighting systems: boxing, muay thai and krav maga, all of which I had chosen consciously. As a child I also did 3 years of taekwondo and I know first hand that most eastern martial arts are not useful for self-defence. Once I even beat up a 2nd dan black belt aikido master, after having trained boxing for only 6 months and when I was only 15. How was that possible if they were supposed to be fighting masters? I myself couldn't believe how silly he looked trying to "redirect my punches" with his dance-like moves, while catching them and falling down.
To be clear, these styles are very spectacular with no doubt, they are great for film acrobacies and they are very good for the person's discipline and physical training. However, their spectacularity and visual effects from Hollywood, and from Hong Kong Bruce Lee movies, have confused generations of people, and mislead millions of children and adults, into believing that they were learning how to fight.
If you call these styles by what their are, then it's all right, but their teachers do not tell you at the beginning: "Just be aware, we are no teaching you how to properly defend yourself when in danger, for that you should train something else." These teachers and schools obviously don't say that, therefore they are effectively deceiving people, or at the very least, misleading. Whether someone is bold enough or not to admit this basic fact and call things by what they are, that's obviously another question.
To sum up, it may be very entertaining to watch Bruce Lee or Yuri Boyka in a film, or to watch a karate exhibition, but I strongly discourage to train them if what you seek is to learn to defend yourself in a real fight.
