Which gelatin do you buy and use most often (especially here?) Bronze, silver, gold, platinum?
In the US, we often don't see sheet gelatin in commercial kitchens rather we see Knox powder. I prefer using sheets but wish to know which one will serve me most as a standard to keep on hand.

I guess my stress level is higher right now then when I worked in the restaurant. I’m not a guy that’s easily stressed just because there’s a ticket more then normal. Just focus and push it, from stress your only going to make mistakes ✌🏼
