Japanese Drinking Culture: Standing Bars, Kampai Etiquette, & Retro Drinks in Tokyo

Shizuka and Max chat about Japanese drinking culture while eating and drinking at izakayas (Japanese gastropubs) in Ueno and Asakusa.
First up is a “tachinomiya” (standing bar) in Ueno called Motsuyaki Otonba, which specializes in “horumon” (offal) dishes. Tachinomiya bars are great to stop by for a quick bite and a drink or two. Here, they try heart, beef tongue, liver, and “motsu nikomi” (stewed innards) and introduce “torizara” (personal plates used when sharing food among groups) and toasting etiquette.
Next, they visit Hoppy Dori (Hoppy Street) in Asakusa, Tokyo, and try the local beverage the area is named after. Hoppy is a beer substitute made from hops, with very low alcohol content (around 0.8%) and is often mixed with shochu (a Japanese distilled alcohol) to make it stronger. It was popularized after WWII at a time when beer was not affordable and Hoppy was more accessible. Today it’s still enjoyed as a retro beverage.

I visited Yokosuka in Summer 1978, and went into a bar where I was served a glass with a clear liquid, into which I poured a golden hoppy liquid.
I was told it was a Hoppy House.
I've spent years trying to find out exactly what that drink was, with no success. I nearly gave up.

There's actually a very interesting drinking/dinning/meeting seat position culture in Japan where by the senior most person in a group will take the seat furthest away from the room's door known as the kamiza (上座) and the junior most person in the group will take the seat nearest to the room's door known as the shimoza (下座).
This culture came about during Japan's feudal period several hundred years ago as the person closest to the room's entry door is most likely to be attacked and be killed first if samurai(s) from a rival clan was/were to setup an ambush and attack a group.
This culture is still very much being practiced in Japan with a modern twist and being implemented in some pretty interesting ways such as the seating arrangements in cars nowadays.
Oh ya and by the way, only high quality Made-In-Japan bonito flakes will "dance" when dressed on top on hot food. There are many low quality Made-In-China bonito flakes nowadays that not only doesn't "dance" when in contact with hot food, the taste is very bad and some researchers even claim it might cause cancer. So do only consume high quality Made-In-Japan bonito flakes.

I haven't been in Japan since 2003 and I am wanting to get back so badly. I'm waiting until after the Olympics and I want to wander Tokyo, down the alleys, visiting these quaint drinking/eating stops. You do such a good job describing Japanese drinking culture and I learned how not to insult anyone by drinking first....thank you for that tidbit.

I always enjoy y'all's videos, but this was super insightful! These are really good rules and I'm just now realizing when I went to Japan I was treated like the senpai with my new friends 😆 I'm sure they were just being nice, but they also knew I was older so I guess it makes sense.
Also, like Max said, props on the honesty about the liver and heart skewers! I wasn't always a fan of some items so beer was absolutely the equalizer! 😂
