    Palusami & Mussles Luau Recipe
    Luau or Palusami is a traditional Polynesian food made from green baby taro leaves mix with coconut cream and onions then cover with banana leaves and bake in a Umu. Because we're living overseas it's not possible for most Polynesians to cook it in the traditional way, so cooking it in the oven with foils is the next best option. There are other options and variations of cooking it too for example, some people add meat to their luau or fish etc. I hope you find this video helpful.
    Ingredients
    • taro leaves
    • Coconut Cream
    • Chopped onions
    • 1 kg raw mussels
    • Salt to season
    • Chopped chillies(optional)
    • Foil to wrap
    Step
    1. Clean, wash and remove mussels from shells
    2. Drain off excess water and chopped each mussels in half
    3. Open coconut cream boxes and pour into a large bowl then add chopped onions and salt and mix well to combine.
    4. In a soup bowl lay 2 sheets of foil then start laying taro leaves about 5-6 leaves forming a bowl area.
    5. Add raw mussels, chillies and about a cup full of coconut cream
    6. Bring in the top part of the leaves to close then secure with the foil
    7. Close the top tight and put it on the baking tray
    8. Repeat the process until all leaves are used
    9. Bake the luau pouches in the oven @ 160° for about 2-3 hours or until it's well cooked
    10. The luau will be ready when the leaves are soft and the coconut cream is thicken too.

    Excellent video shooting of the cooking process which is easy to follow with just the hands are showing with the VO in the background but would have the VO a little louder for my taste, and close up shots of the final product would also be nice. Looks yummy!!! Thanks for sharing.

    What temperature do you set the oven ?

      170-180°Celsius or 375° Fahrenheit for about two hours

      Thanks Bella. It's different for sure with mussels. All I would say is if you decide to make them, make sure to completely drain water off the mussel's before you mix it with coconut cream and using a very thick coconut cream eg Kara brand is a must or any other brand that's thicker consistency if you're not using fresh coconut milk.
