  • Join Amy as she makes Pressure Cooker Pinto Beans from dried beans that do not need to be soaked overnight to soften them. This is my method for no soak dried beans. The pressure cooker softens the beans quickly without the need to for the quick cook method or for soaking overnight to soften. In this recipe, I start with garlic, onion, and bacon as well as lots of spices to make very flavorful pinto beans known as Cowboy Beans, Beans ala Charros, or Frijoles Charros.

    I have found that if you do 30 minutes with a natural release, dry beans tend to be done just right. Thanks for the video. Been considering a smaller pot since it's just me anymore. Cosori looks like a good alternative to Instant Pot.

    Your legumes cook more tender and faster if you DON'T add salt before cooking. Salting causes the beans to remain firm for a longer time. 25-30 minutes can make 2 pounds of perfect beans if cooked with just the aromatics 😋

    Hi Amy! I wanted to leave some feedback and thank you for your video. I like the fact that you didn't use too much liquid. It isn't needed. (For information: I use Emeril's pressure cooker). I have been all over RUclips and listened to those who think they know how to cook (and they do!) but I prefer more beans and less liquid and was worried about the beans expansion if I used too many dried beans. Thank you. I hope you are doing well.

    Thanks for making a video using the smaller sized pressure cooker. I know I can mostly just "halve" the recipe for my 3 quart, but it's nice to know the actual measurements. There's lots of videos out there for the larger sizes, but not many for the "minis." I love your videos. I made your breadmaker rolls and everybody raved about them! Thank you so much. Plan on making these pinto beans today. 😋

    I just got my cooker. I was confused about how to braise the onions and garlics before. Thank you. Your video helped a lot. I'll use it for the first time today. I'll follow your recipe. 😁

    I swear, after watching this, I went to the kitchen, grabbed the half bag of pintos I had, washed them and threw them in the crock pot and used your seasoning (minus bacon). You know, if you foil the lid until it seals the lid and crock, you can get up to 300 degrees, I did. Anyway, you inspired me and in about 4 hours, I'll have a nice dinner. P.s. That Cosori looks great!

    I just bought one of them mini Cosori cookers. Thank you for demonstrating the pressure cooking of pinto beans (I'm not a good soaker either).
    A cooking mentor of mine suggested adding lemon juice to make beans more digestible and easier to cook.
    Perhaps you'd like to try if you haven't already? I have tested it before, and it works.
    Even soaking beans quickly beforehand (say for 15 minutes) makes a difference.
    Thanks for the close-up of the menu panel. Looks very easy to use.
    Can't wait to get my hands on it! So excited :).

    Take three days to sprout and no digestion problems and no sugars, no natural pesticides, think about doing this. They are healthier. p.s. I am getting one of these since Amy recommends it. My Presto just won't come to pressure after replacing everything.

      Sure, let us know how it goes. Shouldn't take much longer than 30-40 mins under pressure to cook them. Adding the onions and bacon just adds a ton of flavor. Thank you for watching. We're glad you like our videos.

    I like your big voice, and I liked your facial expression at 6:08 when you said the word "seasoning". That was lusty. Edit cut it off too fast, IMO. Also the word you wanted was "reduce". I'm only here doing research on cooking pintos from dry (unsoaked) in the pressure cooker I'm about to buy. Best tip I got here was to just cover the beans, no need to add more liquid than that. We aren't making soup. If anonymous comments mean anything, and encouragement works, you GO girl. I watch a lot of cooking youtubes and you are in top 10% in terms of watchability. Some people annoy the shit out of me with their quirks. You are charming.

    I HAVE NEVER PRESOAKED MY BEANS. I CLEAN THEM. THROW THEM IN THE POT AND BOIL ON HIGH FOR 30 MINUTES. TURN IT OFF WITH A LID ON THEM AND LET THEM STAND FOR AN HOUR. THEN I THROW IN MY BACON, ONION AND SOMETIMES SAUSAGE. BRING IT BACK TO BOIL AND CHECK OFTEN FOR ADDING WATER. YOU HAVE TO MAKE SURE YOU WATCH THEM BECAUSE THEY WILL COOK QUICKLY. THOSE BEANS LOOKED DELICIOUS. I MAKE PINTO BEAN SOUP. DELICIOUS.

    • @robertsenko8818
      @robertsenko8818 4 года назад

      Clarification please. Does the bacon, onion, and sausage go into the beans & water? Or do you drain the beans and then is a saute pan add the bacon, etc? Pre-cook bacon and onions? Not sure how the bacon, etc. cook? Thank you for your patience.

  • @76jmm

    Could try homemade sausage would be good, uses ground pork and turkey mixture with the spices.

    • @EricLearnstoCook
      @EricLearnstoCook 7 лет назад +1

      You can cook lots of things in this since it is designed to cook stuff not under pressure too, such as sauteing. Homemade sausage sounds good as long as you are creative with the spices, right?

    • @junezalukmoore
      @junezalukmoore 7 лет назад

      yes, I have a homemade recipe for sausage for 1 lb. up to 6 lb.
      I use a 1/2 ground turkey - 1/2 pork mixture.
      For 1 lb. meat, grind spices together: pinch of red pepper flakes, 1/16 tsp fennel seed, 1/8 tsp garlic powder, 1/4 tsp dried marjoram, 1/4 tsp sea salt, 3/8 tsp ground thyme, 3/8 tsp black pepper, 3/4 tsp ground sage. add egg, mix, make patties, cook.

    I cook my pintos for a little over an hour, not "hours and hours and hours" as you state and the beans I cook are as soft as I get in any restaurant. I don't need a pressure cooker to do it. but I will try this method to see how the next batch turns out.

    • @kathconstance4684
      @kathconstance4684 7 лет назад +1

      Pressure cookers can take a while to come up to pressure. If you want to reduce the time, heat your stock or use boiling water in your recipes.

    • @EricLearnstoCook
      @EricLearnstoCook 7 лет назад +2

      This small pressure cooker seemed to build up pressure in about 5 minutes or less and then the beans cooked under pressure for around 30 or 40 minutes. If you taste them and they don't seem good, put them in for another 10 minutes.
