In my culture, we cook it with scrambled eggs. You roast the eggplant to help remove the skin then you mashed the eggplant into small pieces. You cook the eggplant first and then you add the eggs.
Two of my favorites with eggplant are baked, I peel the eggplant and slice it lengthwise in fourth inch slabs. Coat each side with a very thin layer of mayonnaise and then sprinkle grated parmesan cheese on both sides. bake at 400 degrees for 30 minutes, turning the eggplant half way through cooking so both sides brown. This is simple and delicious. My second favorite is eggplant salad, cut up a large eggplant or several medium/small sized eggplant and cut into half inch cubes. Stir fry in a little olive oil and salt till just tender, set aside to cool. Chop up a little tomato, onion, garlic, green or red pepper, either chopped mint or basil, and parsley. Add salt, olive oil and wine or balsamic vinegar. Add cooked eggplant and stir everything together. Let set for at least 30 minutes to an hour at room temperature to let flavors meld, stirring once or twice during this time. This is very good served at room temperature.
My 1.5 year old Black Beauty Eggplant almost got taken by spider mites this summer. After having yellow, cracked fruit, I fought them off and nourished it back to health. It's back better than ever!!

I planted 10 eggplants this year (trying new varieties) so I enjoyed making Eggplant Ratatouille and I froze seveeal meals for later this winter. I also dehydrate eggplants and use them in soups and to make vegan burgers or meatballs. I also add eggplant when I make hummas, along with roasted red peppers and garlic. It's so good!
I had a bumper crop of black beauty eggplant as well. I like to use some in stews/casseroles, and feel like they add an earthiness and make the meal more filling somehow.
I cut them up (skin and all) and put in the food processor, then freeze in quart bags. I add the ground eggplant to ground beef when I make tacos, chili or lasagna.
I learned how to pickle eggplant and store in the fridge. It is so delicious on Crackers for charcuterie. You can find RUclips videos on how to make it.

My eggplant were not big producers for me. I have a couple plants with fruit on them, and will be making a final harvest in a week or two. However, this morning I harvested a bunch of peppers and snow peas. Deer have been feasting on my pepper plants since the frost and they are heavily damaged. The remnants of three plants have been removed and put inside my compost bin. In a few days, more will be following. If I am lucky, I will get two or three more weeks out of them. I may go ahead and pull them up Monday, and start more winter crops, radishes, Komatsuna, tatsoi, Later Nagasaki Cabbage, spinach, carrots, Swiss Chard, kohlrabi, red mustard, and Chijimisai. I would do it today or tomorrow, but there is rain in the forecast for the next two days, and it is cold outside. My Roma tomatoes have a bunch of little tomatoes on them, my Dad's Sunset Tomatoes are starting to blush, and my purple top turnips are starting to bulb up. War of the Lords officially releases Tuesday, and Space Pirate Scrooge on November 15th. I'm taking a week or two off from writing, then onto the next project, Space Race 2525.
Eggplant Parmesan recipe was amazing this summer and I had planted your petite black beauty I believe. I started from seed. I love baba ganoush as well.
How many fruit do you get per plant per season? And how many plants would you need for a family if you ate eggplant for a dish maybe twice per week....once as a lunch addition and maybe once as a main dinner dish.

Somebody told me to only grow four to six eggplants at a time, and to break off the other blooms. So I only kept six, one got bitten by a squirrel, and one disappeared so I only have four atm. I'm kind of sad I did because they are almost ripe and I don't have any more blooms at the moment and it's mid-august.😢
I am so jealous. I have a eggplant small tree and it bloomed a lot but the eggplants never came. It’s still blooming and then the flowers just droop. I don’t know what I’m doing wrong. I fertilized and water it and it just didn’t produce fruit. I’m sad

Slice the eggplant in rounds, put into an egg wash and then bread crumbs which has been seasoned, then fry. Eat with chutney! Delicious!
