Making Crystal Sugar Mushrooms

- This modern woodland cake technique (using rock candy techniques) requires patience--which I certainly don't have!--while waiting for the sugar solution to dry ... but once you've allowed the caps to dry, you'll be so glad you made them! I mottled the colors for a bit of a neo-psychedelic look.
The smaller silicone vessel you use, the faster the rock candy will crystallize, and the more dramatic the crystal growth. Because the sugar is melted and allowed to recrystallize, these are much more sparkly than they would appear if you simply pressed wet sugar into a mold (as we do with sugar skulls or panoramic Easter eggs). Super fun to make, if you can let them rest for a few days!

I tried to grow sugar crystals inside a fondant mushroom cap, but the sugar pool was too small to form the rocks before the whole thing just crusted solid. This was my runner up :D ... thank you so much!

Girl, you are too good to me! This was begotten of a failed attempt at growing rock candy inside a mushroom cap, but the sugar pool is too small for crystals to form before the whole thing just crusts solid ... I guess i could have just made rock candy and then glued it inside, but ... I like to make things difficult :D
