You can record automation on audio tracks in arrangement view with Arm Automation selected up the top and Arm Recording deselected on the track. That way it doesn't record over the audio (works for me in Live 10).
this is a setting you can toggle in the preferences / record warp launch tab :). By default you will need to have the track armed if you are going to record automation in the session view. :)
If you're recording automation with a third party synth in arrangement view, you HAVE to turn off the record arm button on the track and only use the Automation Arm and Record button at the top, otherwise you won't be able to hear the audio coming from the synth. Took me a while to figure that one out! But yes, thanks for the help.

This was EXATLY what I was looking for! I wonder though, if I want to record one automation (Let's say Filter Res), and then have it loop around to record a different automation on another parameter (Let's say Reverb Size), will it override my first automation (Filter)?
When I record/overdubb automation in arrangement view, it does not overwrite the midi notes, but it creates a new clip. Let's say, my midi clip with the notes starts looping at bar 16. So, 1-16 are empty. When I record from bar 1, it creates an empty midi clip and records the automation. At bar 16, it keeps overdubbing the looping midi clip with automation data. Means, Instead a track with the old arrangement, I have a track with a new clip. This is very annoying. Not only that my looping clips become one, also that I have empty clips where I had no clips at all. Can't find an option to preserve the clips while overdubing. I really want to overdub the automation parameters.

It's weird, for me it works only if the armed button of the pist is not selected.
