defamation is when you tell lies about someone to harm their reputation and possibly get them in trouble.
so 1. it has to be untrue
2. in most juristictions, you have to KNOW that it is untrue while you say it, otherwise it is not defamation
3. it has to be something that isnt just an obvious insult but is believable enough to actually damage the reputation.
so all the examples they give afterwards (aswell as the defecation thing) are actually just childish insults. but as they are clearly identifiable as insults and do not even try to appear like actual factual statments, they are not defamation.
the reason is pretty simple. insults dont hurt anything more than your feelings. defamation (when people actually believe lies about you) can severely harm your business, your life and so on.

It's sounds like a over the top celebration song. But the lyrics are obviously ment as a roast, so the contrast between the melody and the lyrics enhances the irony(of the lyrics).
The lyrics in themselves are also a sarcastic twist on the bad rap-roasts that have become so popular on RUclips.
Every other line in the song is also in one way or another ironic, plain childish(on purpose) or almost painfully true.
Like I said, there's layers. This are just some of the overarching and most obvious ones.
