Homemade Hummus
Ingredients:
30 oz Cooked Chick Peas
2-3 Garlic Cloves
2 Lemons
1/2 Cup Tahini
1/4 Cup Olive Oil
1 tsp Cumin
2-3 Tbsp Ice Water
Parsley (garnish)
Paprika (garnish)
Salt and Pepper
Instructions:
Rinse the chick peas and remove the skins.
In a food processor add the chick peas, garlic, tahini, olive oil, cumin, the juice of 1.5 lemons, a splash of ice water, salt and pepper. Purée until smooth adding a little more ice water if needed. Taste and adjust the seasoning to your liking.
Garnish with olive oil, paprika, and freshly chopped parsley. Serve with fresh veggies, crackers, or pita bread.

If you want smooth hummus, the trick is not about removing the skin, you need to mix the chickpeas well add water until it’s very smooth then add tahini. Never add tahini at the beginning with the chickpeas. I learned this from a Lebanese cook.

I struggle to get mine smooth. I found a way to dissolve the skin by adding a couple of teaspoons of baking soda. It dissolves them, but it slightly discolors the hummus. I wish I had seen your truck before I added baking soda. I’m literally boiling dried chickpeas right now to make hummus.

Why cold water?
For anyone that wants to make this you don't have to remove the skins of the chic peas but it will make it smoother. If I'm making for my self i usually don't bother but if I'm making it for someone else and really want to show off I'll remove the skins.

Peeling them gives you a far better product.
But when my 5 year old wants hummus, no one has time for that.
You won’t need to peel hummus if you boiled it well until it becomes super soft

looking at how mom makes it (im palestinian) she really doesn’t add this much garlic or cumin or pepper or ice water (unless its a bit too thick) 😅 we just put the cumin on top of the hummus after its served on a plate with olive oil but yours still looks amazing so good job

Hot pickle is what I would use for a spicy hot kick. Just a tidbit of pieces. I am 66 years, five months and 10 days as of my comments. Smiles
I like doing that with green olives. Oh my my...
I found the best way to remove the skins from the chickpeas! Take a wooden spoon, and when they were cooking and finished, stir the beans to break the skin, then gently stir the beans against the pot. By pressing the beans against the side of the pot, it helps release the skin use a wooden spoon because of how the wood grain grabs the skin. Then add some more water. Stir some more gently the skins will float to the top of the water. Next use a ladle to lift the skins out of the water. Drain and continue making the hummus. ❤

I just saw a man boil the canned chickpeas 15 minutes cool rub the chickpeas between your hands all the hulls come off. Super easy.

Leave chickpeas in water for about 12 hours or so, rinse that water and then boil them really well. Then you can do all of these steps without removing the skins. If blended well it will be smooth

Instead of peeling them one by one just boil them with baking soda and to get it especially creamy throw some icecubes in :)

A good tip I found is to make sure you mince the garlic through a garlic press before adding to the processor bowl. Unless you like chunks of garlic in your tahini.

Grind ice first and you should add the ingredients gradually first the dry stuff then you add the liquids water is always last to adjust consistency.
One last note you should put it in the fridge for a while before eating and then add the olive oil and other toppings

More of a garnish but I like the flavor of good olive oil. It does not ruin it if that's what you are asking.

Don't peel the skins if you have a Vitamix! Nor do you need to cook the chickpeas until they are mushy. Trust me. Vitamix is going to make the hummus silky smooth

I always remove the skin and i get 5 years older with each pea. Does anyone have a tip on how to peel them faster? Or is it worth peeling at all? I peel them for a smoother texture, since i don't use any food processor.
There are a few tips in the comments from other people 🥂
Grab a handful and rub them together. Then fill bowl with water and the skins float to the top.
Or get your 5 and 7 year olds to do it for you.
