    I just watched one of her videos for a mini loaf which required coil folds every 4 to 6 hours. It is not quite what this video shows like mixing, resting overnight then backing is quite oversimplified. I made that mini loaf which turned out good - great even but I did have to pay attention to the time line, fermentation, etc.

      Wet your fingers and make sure it's not over fermented (proofed)

      @@yufersYeas, and don't start doing it too soon but develop the gluten first. Ive made three of four since the comment.

      I've been baking sourdoughs for a couple of years now. I don't actually use my hands at all. I use a cylindrical container and after a few hours, I use a wooden spoon to twist the dough back and forth. Then turn the container upside down and pull the dough out. Using a bench scraper I flatten and fold it a couple of times. Very simple and no mess! @@hikerJohn

      @@yufers That what I did last week when I made a focaccia but I used a silicone spatula instead of a wooden spoon. And since she does not post much it wont hurt to say I'm now watching the "chainbaker" channel (as in chain smoker).
