Right from the start, Hriday politely explained the USP, what Chris & Max were to expect, what type of pairing and menu choices were available and gave them clarity on what they could order instead of leaving them confused or clueless. 2. Any fine dining place of calibre knows negative reviews done by immature, confused, hangry or ignorant diners (especially RUclipsrs) can ruin their reputation and create an unfavorable impression to the general public. Their servers did their best to explain each of the courses - it is a wise move considering how many food and travel vloggers create negative impressions about any eatery due to cultural differences, miscommunication, unmet expectations, or a mismatch in food choices. 3. 50 USD in Mumbai India for a 10 course fine dining experience is a bargain (Part 1 + this video which is Part 2) when compared to fine dining options in metropolitan cities in Europe and North America. They got more value for their money with this gastronomic lab experience. 4. The servers would explain the same to any guest because mixing and pairing is part of their USP. Such establishments generally see guests who are open to experiments in food choices & drinks. 5. A 10 course dining experience is not for someone who wants to instantly stuff their mouth full of food and finish off the food in 5 minutes. It is meant to be savoured and relished, enjoyed with relaxed conversations with a period of 45 minutes to 1.5 hours - like any French, Spanish or American eatery serving multiple courses. Chris & Max chose Masque Lab and booked reservations for fine dining, not for 'grab and go' fast food. It was an unusual "experience" for some of the RUclips viewers and that's perfectly fine. I appreciate the servers for doing their job well and enjoyed the insights they provided to Masque's gastronomic lab. I would love to visit Masque after watching this delightful video.
a suggestion to you Chris and to Max, try having guava ice cream in Mumbai. ask them to sprinkle a secret masala on top of it. I know what that masala is, but that's for you to find. the taste is ultimate.
The five-course meal is a Western concept, and an Indian concept is 56 Bhog. No need to wear a suit, and don't need wine for a really authentic and rich Indian place. These kinds of places are good for business dinners/lunch meetings, summits, etc. Just my opinion.
Watched the video further, looks like the restaurant people are creative with their dishes 😋. My only problem is portion control to fit in the 5-course type scenario.
Parotta and paratha are 2 extremely different dishes, paratha is stuffed and parotta just has layer nothing stuffed. Chris needs to visit the south to understand what parotta actually is. Paratha comes with subjies while parotta comes with salnas (Subjies). Very different.
gosh fine dining in India still seems bit decadent and spoilt when you know street food is such a steal with the same amount of personal chef attention. As a Indian I appreciate the amount of training and rigorous hard work these waiters and chefs must have gone thru to not only get this kind of english language fluency but to also hold a 'refined' conversation with the customer. Not easy especially if their incomes does. not let them to goto france or italy or napa valley every year on wine tours and learn about wines first hand.
