I tried this method last night, and will adopt it going forward. The flavor is great, but the timing of it using a 22" weber is what really makes it all work. Char your veg, while your veg steams, cook your steak, while your steak rests, heat your skillet, and then let it all come together in the skillet. Thanks for the idea and video, Mr Rollins!

This good old South Texas Kid went to the Kent Rollins store and ordered 3 of his cook books (and spices)...one for me and two for my son & daughter. We have a few family recipes, but Kent really captures the flavors and ingredients from the TX/OK region. The recipes are spot on & I want my kids to be able to make them...like these hmm, hmm good fajitas! My Grandpa knew fajitas! And so does Cowboy Kent! God Bless my Grandpa and Cowboy Kent! :)
Kent I have to thank you for this recipe. I did both steak and chicken fajitas at my VFW today. I didn't do them exactly as you did, but I did follow the seasoning. I did flap meat, chicken breast and the vegies on a grill. Once it was all gone I transferred them to a crock pot. Everyone loved it.

Picked up your cookbook and nailed this down for our church pot-luck. Needless to say it was the first DUTCHOVEN emptied! I used this recipe and layered it like a lasagna or enchilada casserole in a dutch oven. When you start dragging out the dutch ovens, its a show stopper! It gets peoples attention! KILLED IT!1. I love this kind of recipe .. simple, quick but flavorful. And you can make so many different variations so you don't have to eat the same thing all the time. I never would have thought about finishing it off all together in the pan or crock pot, but that makes a lot of sense.

Hello Due to a stroke in 2013, I don't eat a lot of meat these days BUT, I do eat Fajitas. I don't have a smoker BBQ so I do it in the house on my stove. I've used your directions and it comes out fine that way too, VERY tasty. 5 second rule 😂😂 I really suck at cooking but learning from you has helped me so much, I am finally getting my cast iron halfway decent now, I always did it wrong cranking my heat all the way up just smoking up the country with olive oil, now after watching you do your thing I have been able to achieve a nice seasoning in all of my cast, i cook the meals you post up and even get them right 😎😎😎😎

Glad you guys appreciate tri-tip also. It's definitely not a "starter" cut. It's something you start BBQing when ribeye or sirloins get boring and you want a kick of flavour that will test your skills and technique. I have refined my tri-tip technique over the years where I marinate, grill and then smoke it a bit. Give her a 10 minute rest and it comes out like butter! I also like to smoke some peppers in the cool zone, i find that by the time the tip is done, the peppers are heavily smoked and ready to go. Good times buddy
This may be your best video and recipe yet. I've made the Crispy Chipotle Fajitas from your cookbook and they are good. These look better. I'm on a low sodium diet after a medical issue in March but there is no salt in onions or stop light peppers. These are on the menu for the weekend! Thank you for sharing and God Bless.

Hi Kent and Shannon, we made the fajita recipe tonight. Wow! Restaurant quality and then some. We used strip steaks instead but followed everything closely. We also made the refried bean recipe twice and tweaked that recipe a tiny bit a lil more mayo and a lil less sour cream and I also chopped up a half of a chipotle pepper and threw it in, it was spot on delicious. We combined the fajita steak and onions and peppers with some refried beans and some Goya Spanish rice into a tortilla for a flat out stone cold killer dinner! Thanks so much for the recipes! I also ordered the spice package about two weeks ago, excellent quality stuff. First class spices for sure. Everyone who tried it thought it was fantastic.
