    My goal is to try ALL of your sausage recipes. I've started last summer and nothing can stop me any more. All my family demands more and more sausages which I have to make even without smoker or grill because of winter.

    Now you have me wondering about a pot roast sausage. Ground chuck, par boiled small diced potatoes, sautéed onions and carrots with a flour roux, dry onion soup mix for the seasoning, and red wine for the liquid. Just thinking out loud... I haven't tried it. Yet. 😊

    I love all your videos Brad. Have you ever thought of mentioning temperature in Celsius? Even a little note up in the corner.
    Considering only 6 countries in the world use Freedom Units and the rest of the world use Celsius.
    One of my favourite RUclipsrs is @stillit from NZ and he speaks Celsius but always posts the Freedom Units.

    Tough call, I'm not a big meatloaf fan but you never disappoint with your recipes and I have to admit, brisket and pork belly meatloaf may have the ability to change my opinion.

    Goldees had a phenomenal Laotian sausage when I was there in November. I'm not super into sausage but I loved that one. Maybe you could try to recreate it sometime?

    I bought the same sausage stuffer recently after the old Amazon one broke after 2 uses. Any suggestions on how to keep it on the table and one person use friendly? It moves a lot since I won’t bolt it to my kitchen table. Love your content overall and thanks if you respond.

    Brad, you lost me at carrots and celery in meatloaf. Meatloaf is one of my favorite foods and I've eaten it from many different restaurants. Never had it with carrots or celery.

    Variations: use crushed corn flakes, oatmeal, or both instead of bread crumbs; add a packet of ranch dressing mix, beefy onion soup mix, or both. Diced serrano peppers in the veg mix. All good!

    Who puts carrots and celery in meatloaf? Is this a regional thing? Never seen or heard of that in 62 years. Huh. Would I try one if you handed it to me? Of course! Would I make them? Not like that. Every meatloaf recipe I've made called for milk. Powdered milk would have been in mine. Just sayin'.

    I guess that you can put just about anything edible in a casing, but, as the saying goes, just because you can doesn't mean you should. Seems like over complication of a meatloaf recipe but heh, I could be wrong. I certainly won't try it. Love most of your videos and have tried a few of your recipes. Keep up the good work.

    This looks good. I just made a Mushroom and Swiss Burger sausage Mushroom and Swiss Burger Sausage

    Edit to add that I used breadcrumbs as a binder and the sausage was a bit soft. I’ll have to try adding some egg when using them next time. Thanks for that tip.

    I suspect I am an outlier on this one, but I do not care for meatloaf at all. Putting it in a sausage seems like disappointment in a sausage casing to me. I would be hyped up for the sausage and then let down for the deceit. LOL

      It's wintertime in Austin and late afternoon turns to darkness quick. Looks like he started the video before the sun started to dip, took about 30 minutes to prep before casing and then got the sausage on the smoker after sunset so I don't see where he was being dishonest? Twilight only lasts about 45 minutes in the winter and he said the sausage smoked for roughly 1 1/2 hours?
      What a weird thing to fixate on
