We were testing all of the fire alarms to see if they would work on battery backup. The lights you see in this video are actually all of the built-in emergency lighting. We cut the power to the whole building to do this.

Oh god this make me think of my work last Thursday where i was at work. Last Thursday they were testing the fire alarms at my work last week. They have a Notifer system with the same alarms that are in this video. And i work at a warehouse it is a business that we make and pick things for dental's. And man it was very loud in there when the alarms were sounding!!
They have a fire alarm spectralert advances at Meijer in Portage, Indiana.

The Mall near Sacremento, CA has the Speaker strobes and the Horn strobes.
battery backup is designed for no load at 24 hrs, with that said if you were to be technical and accurate you would leave ac off for 24 hrs and run in alarm status for 15 mins. Or you could use a meter or you could run it in alarm condition for 30 mins with no ac voltage. And hopefully a customer as large as the one in your video is monitored. With that said it is my opinion that hrs in alarm status is overkill.

I wonder if that store now has the system sensor L series store had Spector alert advances and may still have them. But I’ve noticed in some buildings that the alarms switched from specter alert advances to the System sensor L series. I am guessing that’s because they are quieter.

A hotel I stayed at had a SpectrAlert Advance outdoor horn strobe in the indoor pool area. At least it stayed quiet while I was there.
Edit" the rest of the system in the hotel itself was System Sensor L Series Horn Strobes.
They are usually set at high volume when installed.
Maybe it sounds louder because the room was smaller

Wow! The specter alert advance on high volume. Correct me if I’m wrong but they are 120 decimals loud when on high volume.
I believe that they average 101 decibels from 10 feet away iirc, there’s a manual online for the spectralert advance and it says it there

Yeah they have back emergency back up for network and dimmers and network, secruity. Everything else like a.c. and heat or water heater are shut off.

I can hear a faint Wheelock out of sync, but it's probably an MT since I don't see Wheelock AS as much as I see MT's.

How come @ 2:00 I see lights in the display case on if its just emergency lighting and what would be considered essential / life safety devices powered... I would not think display case lighting could be considered part of an emergency power / lighting system, OR is the backup power system designed to supply other loads like heating and refrigeration to prevent product loss in an extended outage?
Probably wired to the main lighting system.

This was a test, we where testing to see if it would sound even in a power outage.
Publix that’s what you do I’m always scared that If you guys tested them and I’m in there I would get jumped scared and test the duct detector
