Fabulous! When I was in Ireland I found their bacon is different than what we have in Canada - Ireland being way better! This is certainly comfort food! Thanks Rik! Cheers!
I love Irish food the culture the people the music and the food I hope I Will get to visit Ireland someday.the country that I love so much. I get so emotional thinking about it. It is the country that is and will always be in my heart. Erinn Go Brach
Heaven, I'm in Heaven. Absolutely everything in this recipe is my favorite. I could eat any of your potatoes or cabbage just like they are. But all together it's wonderfully delicious. I took have taken potato peelings and fixed them similarly to yours. Love Ritz crackers and my Grandma always had them for us but they were HiHos back then. Same thing different name. Love what you do. I have Irish, German, Scottish and Seneca Indian ancestry so a lot of the food came from those backgrounds. Also my great great grandparents lived in the Appalachian mountains in Greene county, Tennessee. A lot of the way they did things and spoke were passed down to us. There was always potatoes, onions and cabbage in our meals.
😍This will be my next food i make. Just bought cabbage, allways bacon in freezer, potatoes in friz and onion+garlic in the house. Looking delicious 🤤❤️ Thank you for the recipe Rik 🌹💕
I made a Cheese Pudding for tea last night - basically a cheesy bread and butter pudding. The recipe is from my mum's 1940s cook book. Boy, how our portion sizes have increased! This recipe is tonight's tea. I've got some lovely organic rare breed bacon in the fridge, lots of fat on it, and it's just waiting to he used in a yummy dinner like this.
I enjoyed watching you make this, and I plan to put some Celtic music on and make this for Saint Paddy’s Day. Thanks for sharing this delicious recipe with us.
It’s a real cracker Rik, spoken in my best Frank Carson voice ☘️😁! What a comforting, filling, nutritious & economical dish 😋, my late Irish Dad would have absolutely loved this one, it looks utterly delicious, mashed potatoes, cabbage & bacon was always on the menu in my grannie’s farmhouse kitchen!👵🏻 A pleasant walk down memory lane for me 💗 & I love onion gravy anytime - yummm! Your Ritz cracker crispy topping & crispy potato peels are a marvelous addition. This is definitely going on the menu here at some point this week, perfect food for these cold, damp winters days. Thanks as always for sharing my friend 🙏. xx 👨🍳👌😋☘️🇮🇪🥰
Hi Rik, it's Mike the seafood chef. This is a WINNER. Yep, Potato Peelings can be used as you brilliantly show. The recipe is a must bake. By the way, I'm still enjoying your Anglesey Eggs. Cheers, Mike.
Hello! I haven't watched today's vid yet, as I, quite by chance discovered your "You, RUclips and Google saved my life" video from a year ago and was totally absorbed by it. You've had a life of twists and turns for sure..... people who haven't yet seen it, should do so. Well done on coming out the other side so successfully 🎉. Now for today's offering 😊
I really like this recipe. What’s not to like? Bacon, onions, potatoes, cheddar, and cabbage! The ‘icing’ on the casserole is the crushed crackers. You are right, it’s the Full Monty. Thank you, Rik!
Sitting here in West Cork on a chilly blustery Bank Holiday Monday feeling like some real comfort food..and you have just nailed it...that looks delicious
Ooooh, I love that! Since I lost my pressure cooker due to old age, this just may be my St. Patrick’s Day meal! Definitely good enough for me… Thanks, Rik. ✌️🍻😉

Now.... When I was growing up in Pembrokeshire, my nan always did cabbage with bacon, loved it then, love it now... But wait a minute you're putting it together with creamy, dreamy mashed potato.!!! Come on, that's heaven on a plate..!!! I need to buy a bigger memory card...!!😂 Keep em coming, I might not comment on every one, but I try to see all the videos and they always get a thumbs up from me!! This looks like one Bobby Dazzler of a dish! I'm definitely putting this on my to-do list! A nice couple of bangers as well would go down a treat! And I reckon any leftovers can be a bubble and squeak for breakfast!
Old fashioned Bread pudding, Liver and Bacon like Mum used to make Bless her, she’stand for hours removing veins, Tubes, melt in the mouth it did. I’d spoon it in my mouth during prep❤🎉
I made your corned beef and potato pie yesterday Rikmeister😋 very lovely it was. I will be living off it this week-made far too much haha. This looks amazing mate, proper comfort food!
Spring onions are known as Scallions in Ireland , think this dish is known as Colcannon in Ireland as well , maybe not the Ritz Crackers though , that is a new one on me Rik , but it looks yummy , love your recipes 😊❤😊❤😊
Another dish with poverty foundations. Bacon, cabbage, pots and sprinkle of cheese I do occasionally but never crispy topped from the oven, but its going to get a go next time around :). Might do the skins too.
All the potato peelings I've thrown away over the years and I could've been baking them for healthier "potato chips." **SIGH** Can't wait to make this dish; wonder what to call it since I have to leave out the onions & garlic? It will still be amazing.

Hi👋🏻 from Melbourne, Australia 🇦🇺.
Looks good, But: 7:11 - What happened to the milk?. Looks like it's gone grainy. Was it because it was boiling, or was it because of the garlic & spring onion/ green onion that was in it. I'm very thingy about certain textures.
I noticed it too. Garlic is very slightly acidic and might have caused it. The scallions aren't.
