    Ingredients:
    900g - 2 lbs bone-in chicken thighs or drumsticks (or chicken breast)
    1 tablespoon olive oil - Oil of choice - I used coconut
    1 large white onion, finely chopped
    2 garlic cloves, minced
    ½ teaspoon ground cumin
    ½ teaspoon smoked paprika
    ¼ teaspoon cayenne pepper (optional, for heat)
    1 bay leaf
    1 sprig thyme (or ½ teaspoon dried)
    2 cups 240 ml chicken broth
    1 cup water
    Potatoes, peeled and diced I used new potatoes
    2 medium carrots, sliced
    2 ears fresh corn, cut into thirds. I used baby corn
    1 cup frozen peas
    ½ cup spinach leaves (optional, for freshness)
    ¼ cup fresh cilantro, chopped (plus extra for garnish)
    ½ cup 120ml heavy cream (or ¼ cup heavy cream + ¼ cup coconut milk for balance)
    Juice of 1 lime (plus extra wedges for serving)
    Salt and black pepper to taste

      Yes I was, thank you. And there's enough for a couple of days in my small household.
      I was sold when I saw the baby corn in the ingredients list. Instead of heavy cream I used santen with water, because that's what I had. That's a bit stronger of a coconut taste, but I was positively surprised how well potato, coconut and smoked paprika go together in this stew.

    YUMMO! That looks great, Rik, you've nailed it again! Your "That lid doesn't fit," comment made me chuckle. I'll occasionally stop in at the neighborhood thrift store, and one of the things I look for there is glass pot lids. You can often find them in various sizes, and they're great for covering frying pans that normally come sans lids! I use those quite often, and they can really make a difference in your kitchen!

    Reminds me of my Grandma's cooking. She made chicken stew often. We were at her home often and boy do I mis my grandmas and grandpas. She also made a delicious chicken pot pie out of most of your ingredients. She was the main cook at church, she mostly made the main dish at our fellowship dinners and there's not many cooks better than a bunch of church ladies. Never had to wait for some special occasion such as a wedding or funeral to enjoy their great delicious food. Anyway just keep those fantastic recipes of yours coming. Going to binge cook for a month or so of your recipes, sure my family will enjoy them. Love watching you , and many thanks. Waiting with anticipation what you will present to us next.

    Hi Rik, love this twist on a traditional British chicken casserole, the East meets West flavour combinations sound absolutely delicious 😋, definitely another one I’ll be making in the near future.     Great inspiration recipe with oodles of flexibility for choice of ingredients. My regular meat order includes a 10 kilogram box of fresh skin on bone in chicken thighs, thus I am always looking for interesting options. I apportion the meat order into meal sized amounts and freeze the majority but I keep some fresh to use in a couple of days time. I order about once a month to take advantage of free delivery with bulk orders.

      ​@@BackyardChefjust prefer pork. Chicken is common now in the britain and it's in everything I have seen these poultry farms they are filthy. It's put me off run of the mill chicken in the uk. Thank god we still have farm shops 🙏. Pay more but at least you know where and who has been handling youre meat.

    When you buy a new packet of smoked paprika, before you commit to putting some in whatever you’re cooking try a bit on your finger to make sure that it’s not acrid. Depending on which brand or batch you buy, it can be acrid and then it will ruin your food. If it’s not acrid then a little bit adds a lovely flavour to food e.g., baked beans or chicken.

    I can’t use coconut oil simply because it solidifies in the bottle and it’s a nuisance to have to keep thawing it in a pan of boiling water. My favourite oil is avocado.
