- Meatloaf
Ingredients:
- 500g beef mince
- 500g pork mince
- 130g panko breadcrumbs
- 160ml milk
- 1 onion, grated
- 1 tbsp garlic powder
- 1 tbsp smoked paprika
- 2 eggs
- 10 dashes Worcestershire sauce
- salt and pepper, to taste
- 200ml tomato sauce
- 50ml apple cider vinegar
- 50ml hot sauce
- 50g brown sugar
Method:
1. Preheat your oven to 160°C (320°F).
2. In a mixing bowl, combine the panko breadcrumbs, milk, paprika, and garlic powder. Allow the breadcrumbs to absorb the milk completely. Then, stir in two beaten eggs until well mixed.
3. Add both types of mince to the breadcrumb mixture. Add the Worcestershire sauce, grated onion, and season with salt and pepper. Mix thoroughly with your hands until the mixture is very well combined.
4. Grease a loaf tin and press the meat mixture into it. Then, invert the loaf tin onto a lined baking tray to turn the meatloaf out. Bake in the preheated oven for 15 minutes.
5. While the meatloaf is baking, combine the tomato sauce, apple cider vinegar, hot sauce, and brown sugar in a saucepan over medium heat. Cook, stirring, until the sugar has dissolved completely.
6. After the initial 15 minutes of baking, remove the meatloaf from the oven and brush it with half of the glaze. Return it to the oven and bake for another 15 minutes.
7. Glaze the meatloaf with the remaining half of the glaze and return to the oven for a final 20 minutes, or until the internal temperature reaches 70°C (158°F).
8. Let the meatloaf rest for 10 minutes after baking. Serve sliced with mashed potatoes and peas!

Andy you forgot the brown sauce, made with the juice from the meat and some potatowater& cream, it´s the best! Glazing it insteadt of wrapping it in bacon, looks good though!

I was thinking that too. I prefer my meatloaf and mashed potatoes with gravy on it. Growing up we would do either a barbecue glaze or bacon wrap and sometimes my mom would put hard-boiled eggs in the center of the meatloaf.

❤ When my son was little (about 20-something years ago) for his birthday I made him meatloaf in a bundt pan and frosted it with mashed potatoes, and wrote Happy Birthday with ketchup. 😂 It was delicious and memorable.

Second son just barely tolerated cake. When questioned as to what he wanted, he said 🍉 watermelon! I took a thin slice off the bottom so it wouldn't roll around, used a potato peeler to drill holes in the top for the candles. He had forgotten about the watermelon by that time. All his friends thought it was hilarious! It was a birthday he has never forgotten.
Love you guys! The quick edit to Mitch's basic Meatloaf request was genius. Also, I noticed that Mitch did not deserved the potato ricer, as he is too basic to know the difference.

Basic meatloaf, chef! 😂 My mother, from Texas (me too), used crushed saltines instead of bread crumbs (my job was to make the little bitty crumbs, by hand.), bell pepper was always an ingredient, as well. I make it the same way but I have dressed up the sauce a bit and added chopped mushrooms to the loaf with the bell pepper and onion. I am not a big fan of meatloaf but my husband loves it. I had to work on the recipe for a while until I could find a way to enjoy it, too. Now, we both like it!😋

Unless peas are fresh out of your own garden, frozen peas are a good option. The raw peas in the fresh food aisle have sat for quite a while, and are tough!
Mitch is not basic. he is the everyman. We just want food that's good and that's not hard to say. steak. burgers. tacos. We men are basic not just Mitch.

My Family LOVES meatloaf! My Mother's recipe is similar to yours (no grated onion, picky brother) but I add 2-3T ketchup, (no tom sauce or Worcestershire) and ½-1c. grated Colby-Jack cheese to the meatloaf mix, and then baste the meatloaf with a ketchup/dk soy/garlic & br sugar mix and for the last 20 minutes I wrap it in bacon. 🤤😍🤤! It's easy, delicious comfort food!

It might be basic, but it’s one of my favorite meals. Takes me back to being a kid every time I eat it
I actually made meatloaf the other day ... my first crack at it ever. The recipe only called for five ingredients, and it turned out surprisingly well ... probably not as well as the one Andy made for Basic Mitch, but I found it quite tasty.
BTW, I ❤️ the loaf pan Andy used for this block of meat.
Thanks Andy for one the best comfort foods. To enhance the recipe for Basic Mitch. beyond "mashies". My mother loved to place peeled medium whole potatoes surrounding the meatloaf timed perfectly with the meatloaf. Yum!

I have a tinge of envy because my dads meatloaf recipe was lost and he couldn’t remember it bless him. He would have been 102 this year- when he made it in my younger years,it was amazing- there was never much spare.he wrapped it in smoked streaky bacon. Try every year,embark on a quest to finally capture its flavour and I’m not there yet- close though. This recipe is tender to my heart
