You have not truly had a caramel until you've had a homemade soft caramel. These treats are nothing like anything you can buy at the store! They're rich and buttery with a good soft chew. You'll be the ultimate Christmas candy maker with these, and for good reason!
INGREDIENTS
2 cups heavy cream
2 1/4 cups granulated sugar
6 tbsp unsalted butter
1 1/4 cups light corn syrup
1/2 tsp salt
1 tsp vanilla extract
INSTRUCTIONS
Grease a 9×13 baking sheet pan well with vegetable oil. Line pan with parchment paper and grease paper as well. Set aside.
In a 4-quart heavy-bottomed saucepan, bring cream, sugar, butter, and corn syrup to a boil. Continue to boil until 248°F is reached on a candy or thermometer. Swirl pan every so often to evenly heat.
When the temperature reaches 248°F, remove from heat and stir in salt and vanilla. Immediately pour into prepared pan.
Cool 6-8 hours or up to 24 hours to allow caramel to set up.
Use parchment sling to remove caramels from pan. Remove caramels from parchment and cut with a large sharp knife. The caramels are slightly sticky, so to keep the shape and keep from sticking to each other, individually wrap in parchment papers or wax paper.
For salted caramels:
Let caramels cool 30 minutes then sprinkle 3-4 tablespoons flaky sea salt over caramels. Finish cooling and cut.

You and your videographer are wonderful! Classy, funny, informative...mystified how Food Network or HGTV hasn’t snatched you two up.
Love the caramel candy recipe. Great idea for the Holidays. 🥰🎄🎄
You have quickly become my very favorite YT channel! Your enthusiasm for literally everything you film is truly contagious and I find myself looking so forward to your new offerings. Your style is inspiring and relaxing and comforting all at the same time...this was like making caramels in my jammies with an old college buddy and a glass of cabernet. You hooked me with your grandmother's peanut brittle (I'd made it so many times but NEVER knew I wasn't supposed to spread it. Makes ALL the difference in the world) and you now have a devoted fan forever. Thanks very much.
Awww that is so nice to hear, Molly! So glad you're here and watching!
Adding this to my candy list for this year! I already have the pre cut wrappers 🙂 and I’ve found the cutest boxes to use for my homemade goodie gifts this year!
Your recipes have saved me so many times WG. Thank you so much for all your help... Can't wait til you start your gardens next year..I'll be there with you..
I wish I had a dollar for every Carmel we wrapped when we were kids. Very similar recipe and my mom would make a chocolate Carmel by adding cocoa powder (1/4 cup) at the beginning. So fun to see! We also bought a pizza knife to help with the cutting.
Just made your caramels with my son. Such an easy recipe. Have to say there was some on the spoon and my son put it on a saucer in the fridge to cool so he could sample. I think this will be a must every year. We added a cup and a half chopped pecans just before we poured into the greased pan. Thanks K.W. 💜
Sea salt sounds wonderful! I love to make caramels for any occasion! Yum!
I made this recipe today and they turned out lovely. I’ll definitely make them again
I'm torn between what's more adorable:
Those little twisties of the caramel
OR
The twinkle in Mr Wyse Guide's eyes
when he's talking and trying to chew his homemade caramels ? ?

We make these every year and everyone loves them! Great job Caleb!
Hi kaleb. Just found your channel. And you are one of my favs. Thank you for all the great ideas. Plus your love of family. 🦋🌷
Thank yoi for making this recipe so simple! I loved just dumping everything in the pot and cooking it! It turned out amazing, I made caramel apples and marshmallows covered in caramel and rolled in rice krispies. It tastes soooo good! Thank you!!!❤
I just love your channel. Anything with caramel or toffee I'm here for it 😋
Why haven’t I seen this before? Great recipe! Thanks Caleb🎄🎄
I love this recipe! You have such an ease making this ~ which then makes me ease when trying this! Thank you!

Love how tidy you are when cooking, my kitchen is a mess when I cook!! Have you a method when you start to work??
It's just cleaning as I go! If I do a little bit consistently, I won't be left with a massive mess at the end. 🌞

That looks so good. I would sprinkle some shredded coconut on top if I make these. Thank You Kaleb.
MY FAVORITE COME TO RECIPE!~ THANK YOU SO MUCH FOR TEACHING ME HOW!>>>YER THE SWEETEST!
I love your videos. I am going to make your caramels this week, maybe tomorrow.
I made them. These caramels are awesome. Just follow Kaleb’s directions and you will amaze yourself!
Had a friend/coworker that made fudge every year. Miss you Elaine.
Going to make this in the morning. I usually bring my sugars and corn syrup upto 310 and then add warmed cream and vanilla after and then bring up to 252.
Sorry, vanilla and butter after 252.
Lovely guy. Thank you, Kaleb. Merry Christmas to you. 🎅🤶🎅
You’re right. At the Sunday school Christmas program, we always look for a certain person’s caramels and hoard them if we find them.
I’m going to try this. I have two daughters that make candy. One owns a chocolate store in CA. So I gotta do good.
I just found you today, and U are a breath of fresh air to me, I LOVE Baking, I Love gardening and I love a country style home, We r meant to be 😘 I Will be watching all your videos..I Love your glass Canister set, can U tell me where U found those?
Thank you so much for this recipe! Super easy. Delicious I made some for a friend who loves caramel
Oh yum!!! ❤ Your style is absolutely charming and informative, so I'm going to make caramels today! I also want to add ground toasted brazil nuts to it - do you think it will work?
I used straight sugar for the first time and it turned out good. My second batch I used maple syrup, corn syrup and sweetened condensed milk and of course heavy cream..Omg...with the maple syrup..to die for. Forget the maple extract, use the real deal lol..Canadian gal
yum! Very interesting, as well, to learn how to do it. love your videos!
They look awesome. Cant wait to make them. Thank you for sharing this recipe. What size pan did you use to spread out the mixture?
It's a 9x13 baking sheet pan. That lip on the side is important so it doesn't go all over the countertop as its cooling. Enjoy!
You're so fun!!
Yummy likevhomemade apple pie i got to fo on christmas a vanilla ice creamm
Did u use the heavy whipping cream that’s n the dairy section,,,,,, could I use cream in a can made from carnation,,,,
Please tell me you're making old fashioned fudge too!
Caleb i think Tate and Lyles golden syrup would work as it a converted sugar syrup too but is sugar not corn.
I’ve made these twice. The first time I just eyeballed it and they ended up hard. I just tried them again today with a candy thermometer and they were still hard. I’m not sure what I did wrong. They were SO HARD in about 1 hour
Kaleb, I love all your videos and your house is gorgeous. I was just wondering will this caramel recipe work for caramel apples or is it too soft.
Caleb! Do you stir the pot during the cooking process. I know you would to mix ingredients but how about when melted and coming up to temp? I never see you stir during that part. Thanks!
I use my instant read thermometer to mix it around. It acts as double duty since it mixes it, but also reads the temperature at the same time.
YOU ARE KILLING ME....innnn a good way😂
I think that corn syrup you could replace by honey 🍯 (liquid honey or may honey)
Can you use brown sugar?
How much Karo syrup did he use?
What size pan please?
Do you have measurements for half this amount? PLEASE ☺️
Dumb question…..since I love caramel, but for the past year, I have an allergy to cows milk.
Can I use plant base cream instead?
Will it change the consistency of the caramel?
Yes you can, I use(d) almond milk for a traditional caramel. Works great
Why add the vanilla at the end? Why not in the beginning?
❤️❤️❤️
We will try you’re caramel tomorrow and give it to the neighbors. We can’t take that much sugar. Old gay. Lol keep cooking Kaleb. We’ll keep watching. - John Fuentes
I was VERY Glad to see that you did not add Brown Sugar to your Caramel Recipe. Brown Sugar seems to be the "Thing" that people are adding to Caramels these days, but what they DONT Understand is that White Cane Sugar, makes a Caramel, where as Brown Sugar makes Butterscotch...a totally different type of Chewy Candy. Yes, still a Caramel, but when people name their candy....CARAMELS....And they have placed brown sugar into the recipe, it makes me slap my head....HA! That is because they made Butterscotch, NOT Caramel. Anywhoo....I was Very HAPPY To see somebody who knew what they are doing and made CARAMELS....Without Brown Sugar. Again, I am FINE If they want to add brown sugar, but dont call it a Caramel....call it Butterscotch Chews....or call it Butterscotch Caramels....because their IS A Huge Difference. How do I know? Well, I am retired now, but I am a Professional Caramel Maker, sold my Caramels all over America. So ya, I know what I am talking about. It was totally refreshing to see somebody make CARAMELS And Call them CARAMELS....Have a Great Day Wyse Guide!!!
The only thing I disagreed with you on is where you said, “Make Them Once a Year.”
No way, you have to make them way more often than that. 😂😂😂
OMG Caleb...your Sweater
I love it too! It's weird, but fun!
But what is the actual recipe? Like what are the quantities of each ingredient?
The amounts are all in the description of the video.
can you use half the recipe
Did I miss the ingredient measurements?
This is a fantastic base recipe. That being said I had a bob ross incident and the happy accident rewarded me with far better caramels.
As the recipe sits, there is too much cream content. This amount of cream never allows the caramel the ability to set.
Use 2c of corn syrup in lieu of 1 1/4 cup.
Sweetened condensed milk in place of cream makes the process go faster and the caramels set better.
I will have to give that a try. Is there any taste difference between the 2?
Joe Pona my recipe is 2 sticks of butter a pound of brown sugar 1 can sweetened condensed milk and1 cup corn syrup. And lots of love.
👍💕💕
You’re Kaleb...not Caleb. Right??
You got it!
That looked like a third of it without😅
Haha! I had to make it slightly more with salt because I just like it so much more with that briny taste!
Yes there is an alternative to corn syrup. GLUCOSE SYRUP.
In Australia you cant buy corn syrup so we use GLUCOSE syrup if we're making an American recipe.
We cant buy quite a few ingredients you guys use, our food isn't as processed as yours, sorry but its true
OK well the recipe says to add salt after. You added before. Which is fine but I am in the middle of making it and it's too late 😋
