Game 3 showed that Hans thrives in complicated games. I don't remember who said it, but a great GM said that Hans thrives in complicated attacking games, and so he values initiative a lot more than material on the board, but when you grind the game down into defensive slugfests, Hans wavers. Though Anish is a great chess player, he played into Hans's strengths with this game. The g6 move allowed Hans the initiative he needed to run Anish off the board. I'm thinking that if Anish just sacrificed a pawn and defended a slightly worse endgame, he'd have ended with a draw.
I believe Fabiano Caruana said something to this effect. He mentioned that whenever he plays Hans, Hans can find unexpected moves to put pressure on Caruana in the middle game, but then fails to capitalize on the pressure at some critical point, and eventually collapses in the end game. Whatever the case, it sounds like Hands tends to struggle when there is less material.

3:00 the reason why Hans captures with the bishop here is that when he recaptures with the knight it hits Anish’s light square bishop. The square bishop can’t move because f7 is weak for queen-rook battery, so Hans is getting Anish’s light square bishop. Basically Hans has exchanged his dark square bishop for Anish’s light square bishop which is positionally very smart, because Hans is attacking and opposite color bishops benefit the attacking player.

because white's knight just snatched a black knight while simultaneously opening an attack from the bishop on the queen. the queen has to move away from danger, and the queen is incapable of capturing the knight, so after the black queen avoids the attack, the white knight will move back to safety, and now white is up a whole knight
