I make my rice dish just slightly different. I melt a half a stick of butter in and 8x8 baking dish. When melted I add 1 cup of rice, one can of beef consommé and one small can of sliced mushrooms. Cover with foil and bake at 350 degrees for an hour. Perfect every time and my family loves it!! I am going to try the zucchini with Parmesan cheese…looks delicious!! Thanks for giving us such great ideas, Mandy!!
Everything sounds so yummy! I just love how Gracie knows when her mama has cheese. I love her. I was sitting here saying “Bob the builder!“ Used to watch it with my son when he was small and adorable. We make a fried corn quite often here. Just fry it up in a skillet with some butter and then I hit it with a splash of heavy cream and a little squeeze of honey and add salt and pepper. Cook it for about 15 minutes. Yum Yum Yum.
Hi Mandy! I'm 62 and my mother has been making a version of this since I was a child. She sautes a medium chopped onion in a stick of butter till softened. Adds that to a cup of rice, 1 can consome plus 1 can water in a casserole dish. She never covers hers while baking and it gets this nice crispiness around the edges. We love it! I actually tried your version a couple of nights ago and it was delicious. But...I did miss the butter!
I’ve been making this rice since the 70’s and we loooove it so much too. I started making it with just half a stick of butter! Love Gracie so much❤️. My almost 18 year old Gidget (cat) was watching with me. She sends her love!❤️😂😂

I found your channel in November and I am working my way through years of content and enjoying it. I love to see that I am not the only one who feeds their cat while cooking. Mine, Leo and Cosmos, don’t really go for cheese but I am positive they would cut me for tuna. Just finished watching this episode. My favorite go-to sides and air fried roasted Brussels with S&P, garlic powder and lemon juice. The lemon gives it a big pop of flavor and fresh green beans with the same seasoning and a mushroom sauce. Think homemade deconstructed green bean casserole. Sauté the mushrooms with a clove of garlic and a bit of onion, then add some heavy cream or half and half and some grated Parmesan and cook until thickened. I didn’t put amounts because you can adjust the size for the number of people and just add to taste.
Thumbs up! I’m a simple cook. I usually have roasted or steamed veg as my side. Sometimes rice. See? This is why I need Mandy and the Common ‘tator. You give me ideas!
I highly recommend roasted green beans with lemon & parmigian. Through 1 lb of beans on a foil lined oil sprayed baking sheet, toss with olive oil, salt & pepper, roast at 425 degrees for 13-15 minutes until tender crisp & there’s a little color on the beans. As soon as they come out, squeeze fresh lemon juice over them & sprinkle with a little grated parm. Stupid good. Can be adapted form almost any veggie.
Go to side dish slice corn off the cob (it’s best !!) about 4 ears ,chop up a jalapeño seeded. Heat a pan with a couple tbsps of olive oil sauté all ingredients over medium heat stirring occasionally, until corn gets mostly caramelized !! Great by it’s self or after add a squeeze of lime juice or some feta cheese !!! Yummmmmmm
I just made a version of that brown rice for lunch because I'm home today due to severe weather and messy road conditions, and I had all the ingredients in my pantry and the cold makes me want comfort food. My mom made it back in the 80s. She also added mushrooms; if you're a fan of mushrooms, just add a small can or jar of sliced mushrooms or use fresh ones. I also only use a half stick of butter, plus enough to butter the pan - so maybe 4.5 tablespoons. I'm not a fan of french onion soup, so I use one can of beef consomme and one small can of beef broth instead. There are so many variations - I've even seen it made with chicken stock instead of beef. We always called it brown rice, too, in our house. Now I call it mushroom beefy butter rice.
The way you made your brown rice is EXACTLY how I've been making it for 20+ years. Except I use spreadable butter and just put about 2 tbsp's in with the rice and soups, mix everything together, then bake it on 350 for 1 hour. We LOVE this as a side to dish to pork tenderloins, baked chicken, or just about any kind of protein. It's GREAT!

My Mother made the rice dish way back in the day. It is delicious. She made it with Swiss steak, meat loaf, baked chicken, pretty much anything she needed an easy side dish for. It was basically Rice-a-Roni before it was available. Thanks for the reminder.
Thanks Mandy, I love Zucchini & put it in a Casserole: Sliced Sauteed Zucchini & Sweet Onions, + fold into ur favorite Stuffing made to box directions but back off on some water so its dry (since more wet ingred will be added), then add 1 can Cream of Chicken & 1C Sour Cream & 1-2C Shredded Cheddar then bake in a 9x13 pan until Cheese is bubbly. Simetimes I add Carrots & Yellow Summer Squash. Its delish, mainly bc I love Stuffing anyway. My next fav side is a Can of Sliced Beets, 1-2Tbsp Butter & 1/2C Sour Cream & lots of Pepper - its an old fashioned Irish side dish & the sour cream turns the beets pink so its great for Valentines Day dishes. Hope u like these! Beets are fabulous for heart health but can cause Gout flare ups so watch it if u have Gout. The same goes for Asparagus & Brussel Sprouts - they're all high in Purines which raise Uric Acid. 🙋♀️🏠☃️❄️💨💕💕💕
Stir over low heat, until you have a creamy sauce. This is great w/ steak, meatloaf, peel & eat shrimp, etc. This is one of my family's favorite side dishes.

One of my favorite side dishes is a zucchini dish. It’s 2-4 zucchini, corn niblets, 1/2 onion, 2 Roma tomatoes and 8 ounces jack cheese. Cut the zucchini lengthwise in half then slice it about 1/2 in thick. Dice onions and tomatoes. I use the frozen corn niblets. Cube your jack cheese. Place zucchini in pot with about enough water to be just below top of zucchini. Add salt n pepper. Cook until about half done. Then add your onions, tomatoes and corn. Simmer until zucchini is tender then add cheese. Please don’t substitute the jack cheese for any other cheese. The cheese melts in to the broth. I serve it in a bowl topped with salsa.
I use the Weber garlic Parmesan seasoning on my zucchini and chicken and mushrooms baked in the oven with butter. Oh my a must try. And don't be stingy with that season. Sprinkle Parmesan cheese and let it melt after everything else is done. Oh my goodness. It's so yummy.
We LOVE the brown rice. See Mindy Mom did a version of it a couple of weeks ago by adding browed ground beef. After the rice was cooked she added french onion dip AND the fried onions and topped it with shredded swiss or gruyere. Turned it into a whole meal.
One of our favorite side dishes is a Pasta Dish that we call Cheesy Spaghetti. My mom was one of 6 girls and between them all, they blessed my grandparents with 22 grandchildren. Most of us were very close in age, and in the weekends we often ended up at Grandmother and Dado's house to play. She needed something cheap to feed us for lunch so she often made Cheesy Spaghetti. It has Spaghetti, onion, tomato juice, oil, salt, pepper and american cheese. As kids we ate it for lunch often at grandmothers with applesauce. As adults, we prefer it as a side dish with either cubed steaks and onions or pork chops. My daughter and I like it so much that it was one of her pregancy cravings. The only bad part about it is that leftovers are not good, but it is a cheap dish to make that is ready quickly.
If you want to change up the zucchini slices w/parmesan, sprinkle on the slightest bit of cayenne pepper, AND some garlic powder. Really adds the "WOW" to the zucchini slices!!
I've also been making the Brown Rice dish for years. I add a stick of butter to a 9×13 glass baking dish and put it in the oven to melt while it preheats. I then add rice and soups and bake. I've also added mushrooms if I have any on hand. Love your recipes. Thank you from a fellow South Carolinian.
I have been following you for awhile now. I drive a truck with my husband and I love to pick one of your Playlist and play all. The Fiesta corn recipe is the first recipe I have tried and my husband and I absolutely loved it. As Steven would say, it was a go backer. Lol. Can't wait to try more of your recipes. I have an air fryer and an instant pot that I don't use as often as I'd like and you are inspiring me to use them more. My husband said that you could add some taco meat or something IN it and make it a one pot meal. I will try that.
I’ve made your brown rice in the instant pot as well. Throw everything in, cook high pressure 5 mins then naturally release for 10. But I add about a teaspoon of salt and brown sugar to balance out the deep deep flavor it is. It’s a family favorite for sure! ❤
I look forward to trying that simple zucchini recipe. I usually sauté it with onions until it is mush, but I think I’d really like it baked with the Parmesan cheese. I have been cooking Jasmine rice in the EPC, with a tablespoon of chicken bouillon per cup of rice AND a teaspoon of turmeric per same cup of rice. SO GOOD! TFS.
My friend taught me to make a zucinni caserole with like 4 zucinnis sliced 2 eggs beaten like a half of onion(depending on your liking of onion.2 cups cheddar cheese 1 mixed with zucchini and beaten eggs and one cup sprinkled on top. Put into sprayed 9x13 pan and top with foil Bake approx 20 to 30 min.taking foil off last 10 min to brown cheese a little bit. Church potluck asks for it every year. Hope you try if you didnt already know. 4 ingredient uf you count onion. I add salt pepper and garlic powder to taste.

I took your momma's rice recipe and switched it up. I needed some rice to go with nachos one night. I took the french onion soup out and replaced with a can of rotel. I also added just a little taco seasoning, rotel, beef consumme and butter and there you go..... some taco rice!1 Its delicious. Thanks for sharing!
We eat a lot of zucchini in the summertime. One of our favorite ways is similar to yours. We slice it into rounds, sautée it in a skillet, turn pieces over. Put about a 1/2 t of pizza sauce on top of each one, a slice of Turkey pepperoni, and shredded mozzarella. Then we cover it until cheese melts and sprinkle it with pizza seasoning. Sometimes this is the whole lunch. It is so good.
Made the corn recipe last night and we loved it. I dont buy fiesta corn because it cost twice as much as a regular can of corn. I always have a bag of the small tri color bell peppers so i just chopped some of those and cooked in a little butter before adding
We make zucchini and yellow squash mixed, this way. We have it a lot when we're getting squash from our garden. I have also sprinkled onion powder on it and even sprinkled some ranch dressing mix on it, too. We love squash.
In the summer I like calabacitas. It's a New Mexican combination of zucchini, corn and tomatoes. Zucchini is always fresh; corn and tomatoes can be fresh or canned. Slice and sautee the zucchini in butter or oil, add onion and/or garlic if you'd like and S&P to taste. Sautee the corn and then add the tomatoes if they're fresh. If either are canned or frozen, add them when the zucchini is about tender, and when the flavors are well melded add some cheese if you'd like. You can add a little green chili or jalapeño if desired, or use a can of roasted tomatoes with chilis. It's longer to explain than to cook, and it is a nice flavor combination. You can make it mild or spicier depending on whst you're serving it with.
I make your 'mommas' brown rice too! I do add the butter and to make it a main dish, I add cut up chicken before baking. Occasionally, to make it a little healthier I do use actual brown rice too. Love your channel!
I love a side dish video! I also use butter in the brown rice. It’s the way I learned to make it. Sautéed or roasted broccoli or zucchini are my favorites. I get the best ideas from you & Amber, even when I don’t follow exactly and use whatever I have on hand. I’m eating a rigatoni with Italian sausage and zucchini that was inspired by her right now, and I’m making the chicken with queso that you made recently later this week.

I make a zucchini, yellow squash, red onion stir fry.. You chop your onion, zucchini and yellow squash into bite size put olive oil and a tb spoon butter in pan and stir fry it's so good I add a little garlic powder too!"

I have a yummy corn recipe for y'all. 1 package of frozen super sweet corn, 1/2 stick of butter, about 4 oz of cream cheese, a teaspoon or so of sugar, heavy cream to thin out the cream cheese, garlic powder, salt and freshly cracked black pepper all to taste. Heat up everything in a saucepan until creamy and well combined.
Our side dishes are usually some sort of potato. But husband would pick peas every single day! I like to roast brussel sprouts & carrots (individually) and freeze them for convenience. Zucchini is our favorite in summer time. It's hard to find good zucchini this time of year in Michigan.
A side my family always liked (except for husband who doesn't like cheese) RICE & BROCCOLI CASSEROLE 1 stick butter 2 cups cooked rice, unsalted 1/2 cup chopped celery 1/2 cup chopped onion 1 10-oz - 14 oz pkg chopped broccoli (about 3 cups florets), don’t salt 1/2 lb Velveeta Cheese, cubed (8 oz.) 1/2 t. salt 1 t. sugar Scant 1/8 tsp garlic powder
Melt margarine in 10 x 10 baking dish. Pour some of the margarine into a small dish so that you can pour it on top of casserole before baking & small amount in small baking dish for Genie. Brush sides with the butter. Cook broccoli in 1 cup water in a large saucepan. (Don’t let water boil out too much) Add cheese and melt. Add rice, salt and sugar, garlic powder, celery & onion. Brush sides of baking dish with butter & add broccoli & cheese mixture. (Mixture should be very soupy so that cheese can brown without casserole being dry.) Combine 2 oz cheese & 1 TBSP margarine & small amount of water. Microwave until melted. Pour over top of casserole. This will help the top brown easier. (Bake smaller dish for less time.) Bake @ 400 for 35 to 40 min. Cheese should brown very slightly. (If casserole is too dry, spoon a little bit of water over top & let soak in. Check half way through)
Great video Mandy and Steven. So you all are having rain. Up here in SE MI we are in the deep freeze! Temps this week in the single. digits and wind chills like 10 below zero. With snow! We did not have a White Christmas, it was warm, for us, in the 49’s and raining. Many times my side dishes are a simple frozen vegetable or a salad. I have made this rice for years :) My recipe is actually called "stick of butter rice". If you are using a 9x13, then you want the entire stick. I actually printed your mama's recipe a few videos back :) and I thought to myself "where's the butter???" 🤣🤣 I had it on my list to try and hadn't yet. Thank you for all your videos! My ex-mother-in-law makes Momma's rice and bakes it with pork chops in it. She would brown the pork chops first, then add them on top and bake them all together. It is my ex's favorite, so I learned how to make it when we were first married. It gives the pork chops a good flavor also.
The brown rice recipe reminds me of a dish my daughters neighbor brought over when she had her 2nd baby. The neighbor cooked pork chops in with the rice. It was so good. I can’t wait to make all of the sides you shared. Thanks
Hi I do a zucchini in the fry pan you slice one med onion and about 3 or 4 minced garlic and 2 small zucchini cut about a 1/4 of and inch rounds and a T of olive oil and 2 T of butter saute onion and garlic add zuc stir together cover for about 20 min stirring occasionally then uncover for another 5 min and enjoy. I enjoy watching your videos and then I think you would fit in my family well lol
Love these recipes another great idea for a corn side is cheesy sweetcorn on rolls, we usually have it as a side with what we here in South Africa call a Braai, LOL, you might know it as a BBQ. You mix 1 tin of creamed corn with equal part cheese, about a cup of cheese maybe more if you like, I like using a sharp cheddar but to be honest any melting cheese would do, then you mix in mayo between a half a cup to a cup, until it feels right and some season salt we have Arromat here but your Aunty Nono's would be great, this is the base, you can then add chopped onions, chili flakes or Jalapenos, hot sauce, bacon bits what ever sounds good, once this is mixed in a bowl you top a half a roll, I use hamburger buns if that helps and stick it under a grill till the cheese gets all golden brown and yummy then enjoy. This is a really yummy side and a favorite of ours. Can't wait to see what you cooked up on Friday. Lots of love from a thundering KZN South Africa, just a summer thunderstorm in our case.
Hey Mandy. Love you and your family. One of the sides that my brother and I love is bacon wrapped asparagus bundles. It is 4 or 5 spears wrapped in one strip of bacon and baked at 375 f until the bacon looks crisp. My husband doesn't like asparagus, so I make a cup of smashed bacon and cheese broccoli for him. Boil 1/2 cup broccoli and put in 1 corner of the pan the asparagus is being cooked on. Smash the broccoli with a serving spoon. Sprinkle on some cracked black pepper. Now add raw chopped bacon to your liking and some shredded parmesan cheese. The two vegetables should be done about the same time, but keep an eye on the broccoli. Hope you like the sound of these.
Mandy, the Rice, it's called Stick of Butter rice. Don't be afraid of the "stick" . I've also seen many, and have done myself, just put the stick of butter in the center and don't cut it up. But I do fluff and stir up the rice once done. YUM!

The recipes sound great ~ making my list as you cook! My favorite side dish: BUTTER PEAS! The perfect comfort meal is; baked Beans with Oscar Mayer Hotdogs, Butter Peas, and Cheeseburgers on Sour Dough Bread bun with homemade Chili and Slaw! Good LORD ALMIGHTY!
I found a cheesy potatoes recipe while scrolling through Facebook reals and my husband and I have eaten them multiple times in the last few weeks. I even changed them up and added a kielbasa sausage, which we ate as a casserole meal. So good!

I've been making baked zucchini like that for quite a while, but I also add garlic powder or just use garlic salt along with the pepper and bake as you did. We love it!

Yes Mandy thank you for rinsing the rice. Because rice is dirty and starchy. I loved the corn taste test comment "this is creamy". Mandy I’ve been making this for about 45 years. I DO use a whole stick of butter, melted first, than add the rest of the ingredients. We call it “dirty” rice and it goes great with baked chicken! Thanks for the other two sides.
We love the zucchini and have been eating it for years. Our favorite is to slice it real thin and then roast it till it gets almost crispy with the parmesan. Yummy❤
I haven't made the Fiesta Corn Casserole as when it comes to corn, we usually just eat plain corn. However, with the Zucchini my Mother in law's friend shared a recipe that is very similar to the one you just posted except she adds finely diced onion, I add onion powder because I rarely have onion in the house (picky eaters who don't like the texture but are okay with the flavor). And pretty much the same with the rice...we use onion powder and beef bouillon instead. I might try the corn casserole this week as we're having Pork Carnitas.

Love the brown riice, canned beef consomme here is over $3 a can so quite pricey, I've made it using french onion soup and home made beef broth and it goes down a treat. I'll need to trythe zuchini (we call them courgettes) with parmesan, they looked grreat. Cant wait till friday now to see what you're making to go with that corn casserole. I use a whole stick but I am also doubling the rice and the consume and French onion. I toast my rice in the butter and then I put in a baking dish. It makes the rice taste nuttier.

I’ve been making this rice since the 70’s and we loooove it so much too. I started making it with just half a stick of butter! Love Gracie so much❤️. My almost 18 year old Gidget (cat) was watching with me. She sends her love!❤️😂😂

I found your channel in November and I am working my way through years of content and enjoying it. I love to see that I am not the only one who feeds their cat while cooking. Mine, Leo and Cosmos, don’t really go for cheese but I am positive they would cut me for tuna. Just finished watching this episode. My favorite go-to sides and air fried roasted Brussels with S&P, garlic powder and lemon juice. The lemon gives it a big pop of flavor and fresh green beans with the same seasoning and a mushroom sauce. Think homemade deconstructed green bean casserole. Sauté the mushrooms with a clove of garlic and a bit of onion, then add some heavy cream or half and half and some grated Parmesan and cook until thickened. I didn’t put amounts because you can adjust the size for the number of people and just add to taste.
You have to try her creamy chicken tortellini soup on the stove top….oh my , so so good….especially on cold winter day

I highly recommend roasted green beans with lemon & parmigian. Through 1 lb of beans on a foil lined oil sprayed baking sheet, toss with olive oil, salt & pepper, roast at 425 degrees for 13-15 minutes until tender crisp & there’s a little color on the beans. As soon as they come out, squeeze fresh lemon juice over them & sprinkle with a little grated parm. Stupid good.
Can be adapted form almost any veggie.
I think because your sweet kitty is hearing challenges, her sense of smell, especially for cheese, is heightened.
Go to side dish slice corn off the cob (it’s best !!) about 4 ears ,chop up a jalapeño seeded. Heat a pan with a couple tbsps of olive oil sauté all ingredients over medium heat stirring occasionally, until corn gets mostly caramelized !! Great by it’s self or after add a squeeze of lime juice or some feta cheese !!! Yummmmmmm
I just made a version of that brown rice for lunch because I'm home today due to severe weather and messy road conditions, and I had all the ingredients in my pantry and the cold makes me want comfort food. My mom made it back in the 80s. She also added mushrooms; if you're a fan of mushrooms, just add a small can or jar of sliced mushrooms or use fresh ones. I also only use a half stick of butter, plus enough to butter the pan - so maybe 4.5 tablespoons. I'm not a fan of french onion soup, so I use one can of beef consomme and one small can of beef broth instead. There are so many variations - I've even seen it made with chicken stock instead of beef. We always called it brown rice, too, in our house. Now I call it mushroom beefy butter rice.

The way you made your brown rice is EXACTLY how I've been making it for 20+ years. Except I use spreadable butter and just put about 2 tbsp's in with the rice and soups, mix everything together, then bake it on 350 for 1 hour. We LOVE this as a side to dish to pork tenderloins, baked chicken, or just about any kind of protein. It's GREAT!

My Mother made the rice dish way back in the day. It is delicious. She made it with Swiss steak, meat loaf, baked chicken, pretty much anything she needed an easy side dish for. It was basically Rice-a-Roni before it was available. Thanks for the reminder.
Thanks Mandy, I love Zucchini & put it in a Casserole: Sliced Sauteed Zucchini & Sweet Onions, + fold into ur favorite Stuffing made to box directions but back off on some water so its dry (since more wet ingred will be added), then add 1 can Cream of Chicken & 1C Sour Cream & 1-2C Shredded Cheddar then bake in a 9x13 pan until Cheese is bubbly. Simetimes I add Carrots & Yellow Summer Squash. Its delish, mainly bc I love Stuffing anyway.
My next fav side is a Can of Sliced Beets, 1-2Tbsp Butter & 1/2C Sour Cream & lots of Pepper - its an old fashioned Irish side dish & the sour cream turns the beets pink so its great for Valentines Day dishes. Hope u like these!
Beets are fabulous for heart health but can cause Gout flare ups so watch it if u have Gout. The same goes for Asparagus & Brussel Sprouts - they're all high in Purines which raise Uric Acid. 🙋♀️🏠☃️❄️💨💕💕💕
Stir over low heat, until you have a creamy sauce. This is great w/ steak, meatloaf, peel & eat shrimp, etc. This is one of my family's favorite side dishes.

One of my favorite side dishes is a zucchini dish. It’s 2-4 zucchini, corn niblets, 1/2 onion, 2 Roma tomatoes and 8 ounces jack cheese. Cut the zucchini lengthwise in half then slice it about 1/2 in thick. Dice onions and tomatoes. I use the frozen corn niblets. Cube your jack cheese.
Place zucchini in pot with about enough water to be just below top of zucchini. Add salt n pepper. Cook until about half done. Then add your onions, tomatoes and corn. Simmer until zucchini is tender then add cheese. Please don’t substitute the jack cheese for any other cheese. The cheese melts in to the broth. I serve it in a bowl topped with salsa.
I use the Weber garlic Parmesan seasoning on my zucchini and chicken and mushrooms baked in the oven with butter. Oh my a must try. And don't be stingy with that season. Sprinkle Parmesan cheese and let it melt after everything else is done. Oh my goodness. It's so yummy.
We LOVE the brown rice. See Mindy Mom did a version of it a couple of weeks ago by adding browed ground beef. After the rice was cooked she added french onion dip AND the fried onions and topped it with shredded swiss or gruyere. Turned it into a whole meal.
One of our favorite side dishes is a Pasta Dish that we call Cheesy Spaghetti. My mom was one of 6 girls and between them all, they blessed my grandparents with 22 grandchildren. Most of us were very close in age, and in the weekends we often ended up at Grandmother and Dado's house to play. She needed something cheap to feed us for lunch so she often made Cheesy Spaghetti. It has Spaghetti, onion, tomato juice, oil, salt, pepper and american cheese. As kids we ate it for lunch often at grandmothers with applesauce. As adults, we prefer it as a side dish with either cubed steaks and onions or pork chops. My daughter and I like it so much that it was one of her pregancy cravings. The only bad part about it is that leftovers are not good, but it is a cheap dish to make that is ready quickly.

If you want to change up the zucchini slices w/parmesan, sprinkle on the slightest bit of cayenne pepper, AND some garlic powder. Really adds the "WOW" to the zucchini slices!!
I've also been making the Brown Rice dish for years. I add a stick of butter to a 9×13 glass baking dish and put it in the oven to melt while it preheats. I then add rice and soups and bake. I've also added mushrooms if I have any on hand.

I have been following you for awhile now. I drive a truck with my husband and I love to pick one of your Playlist and play all. The Fiesta corn recipe is the first recipe I have tried and my husband and I absolutely loved it. As Steven would say, it was a go backer. Lol. Can't wait to try more of your recipes. I have an air fryer and an instant pot that I don't use as often as I'd like and you are inspiring me to use them more. My husband said that you could add some taco meat or something IN it and make it a one pot meal. I will try that.
I’ve made your brown rice in the instant pot as well. Throw everything in, cook high pressure 5 mins then naturally release for 10. But I add about a teaspoon of salt and brown sugar to balance out the deep deep flavor it is. It’s a family favorite for sure! ❤

I have been cooking Jasmine rice in the EPC, with a tablespoon of chicken bouillon per cup of rice AND a teaspoon of turmeric per same cup of rice. SO GOOD! TFS.

My friend taught me to make a zucinni caserole with like 4 zucinnis sliced 2 eggs beaten like a half of onion(depending on your liking of onion.2 cups cheddar cheese 1 mixed with zucchini and beaten eggs and one cup sprinkled on top. Put into sprayed 9x13 pan and top with foil Bake approx 20 to 30 min.taking foil off last 10 min to brown cheese a little bit. Church potluck asks for it every year. Hope you try if you didnt already know. 4 ingredient uf you count onion. I add salt pepper and garlic powder to taste.

I took your momma's rice recipe and switched it up. I needed some rice to go with nachos one night. I took the french onion soup out and replaced with a can of rotel. I also added just a little taco seasoning, rotel, beef consumme and butter and there you go..... some taco rice!1 Its delicious. Thanks for sharing!
We eat a lot of zucchini in the summertime. One of our favorite ways is similar to yours. We slice it into rounds, sautée it in a skillet, turn pieces over. Put about a 1/2 t of pizza sauce on top of each one, a slice of Turkey pepperoni, and shredded mozzarella. Then we cover it until cheese melts and sprinkle it with pizza seasoning. Sometimes this is the whole lunch. It is so good.
Made the corn recipe last night and we loved it. I dont buy fiesta corn because it cost twice as much as a regular can of corn. I always have a bag of the small tri color bell peppers so i just chopped some of those and cooked in a little butter before adding
We make zucchini and yellow squash mixed, this way. We have it a lot when we're getting squash from our garden. I have also sprinkled onion powder on it and even sprinkled some ranch dressing mix on it, too. We love squash.

In the summer I like calabacitas. It's a New Mexican combination of zucchini, corn and tomatoes. Zucchini is always fresh; corn and tomatoes can be fresh or canned. Slice and sautee the zucchini in butter or oil, add onion and/or garlic if you'd like and S&P to taste. Sautee the corn and then add the tomatoes if they're fresh. If either are canned or frozen, add them when the zucchini is about tender, and when the flavors are well melded add some cheese if you'd like. You can add a little green chili or jalapeño if desired, or use a can of roasted tomatoes with chilis. It's longer to explain than to cook, and it is a nice flavor combination. You can make it mild or spicier depending on whst you're serving it with.
I make your 'mommas' brown rice too! I do add the butter and to make it a main dish, I add cut up chicken before baking. Occasionally, to make it a little healthier I do use actual brown rice too.

I love a side dish video! I also use butter in the brown rice. It’s the way I learned to make it. Sautéed or roasted broccoli or zucchini are my favorites. I get the best ideas from you & Amber, even when I don’t follow exactly and use whatever I have on hand. I’m eating a rigatoni with Italian sausage and zucchini that was inspired by her right now, and I’m making the chicken with queso that you made recently later this week.

I make a zucchini, yellow squash, red onion stir fry.. You chop your onion, zucchini and yellow squash into bite size put olive oil and a tb spoon butter in pan and stir fry it's so good I add a little garlic powder too!"

I have a yummy corn recipe for y'all. 1 package of frozen super sweet corn, 1/2 stick of butter, about 4 oz of cream cheese, a teaspoon or so of sugar, heavy cream to thin out the cream cheese, garlic powder, salt and freshly cracked black pepper all to taste. Heat up everything in a saucepan until creamy and well combined.

Our side dishes are usually some sort of potato. But husband would pick peas every single day! I like to roast brussel sprouts & carrots (individually) and freeze them for convenience. Zucchini is our favorite in summer time. It's hard to find good zucchini this time of year in Michigan.

A side my family always liked (except for husband who doesn't like cheese)
RICE & BROCCOLI CASSEROLE
1 stick butter
2 cups cooked rice, unsalted
1/2 cup chopped celery
1/2 cup chopped onion
1 10-oz - 14 oz pkg chopped broccoli (about 3 cups florets), don’t salt
1/2 lb Velveeta Cheese, cubed (8 oz.)
1/2 t. salt
1 t. sugar
Scant 1/8 tsp garlic powder
Melt margarine in 10 x 10 baking dish. Pour some of the margarine into a small dish so that you can pour it on top of casserole before baking & small amount in small baking dish for Genie. Brush sides with the butter. Cook broccoli in 1 cup water in a large saucepan. (Don’t let water boil out too much) Add cheese and melt. Add rice, salt and sugar, garlic powder, celery & onion. Brush sides of baking dish with butter & add broccoli & cheese mixture. (Mixture should be very soupy so that cheese can brown without casserole being dry.) Combine 2 oz cheese & 1 TBSP margarine & small amount of water. Microwave until melted. Pour over top of casserole. This will help the top brown easier. (Bake smaller dish for less time.) Bake @ 400 for 35 to 40 min. Cheese should brown very slightly. (If casserole is too dry, spoon a little bit of water over top & let soak in. Check half way through)
Great video Mandy and Steven. So you all are having rain. Up here in SE MI we are in the deep freeze! Temps this week in the single. digits and wind chills like 10 below zero. With snow! We did not have a White Christmas, it was warm, for us, in the 49’s and raining. Many times my side dishes are a simple frozen vegetable or a salad. I have made this rice for years :) My recipe is actually called "stick of butter rice". If you are using a 9x13, then you want the entire stick.

My ex-mother-in-law makes Momma's rice and bakes it with pork chops in it. She would brown the pork chops first, then add them on top and bake them all together. It is my ex's favorite, so I learned how to make it when we were first married. It gives the pork chops a good flavor also.

Hi I do a zucchini in the fry pan you slice one med onion and about 3 or 4 minced garlic and 2 small zucchini cut about a 1/4 of and inch rounds and a T of olive oil and 2 T of butter saute onion and garlic add zuc stir together cover for about 20 min stirring occasionally then uncover for another 5 min and enjoy. I enjoy watching your videos and then I think you would fit in my family well lol
Love these recipes another great idea for a corn side is cheesy sweetcorn on rolls, we usually have it as a side with what we here in South Africa call a Braai, LOL, you might know it as a BBQ.
You mix 1 tin of creamed corn with equal part cheese, about a cup of cheese maybe more if you like, I like using a sharp cheddar but to be honest any melting cheese would do, then you mix in mayo between a half a cup to a cup, until it feels right and some season salt we have Arromat here but your Aunty Nono's would be great, this is the base, you can then add chopped onions, chili flakes or Jalapenos, hot sauce, bacon bits what ever sounds good, once this is mixed in a bowl you top a half a roll, I use hamburger buns if that helps and stick it under a grill till the cheese gets all golden brown and yummy then enjoy. This is a really yummy side and a favorite of ours.

Hey Mandy. Love you and your family. One of the sides that my brother and I love is bacon wrapped asparagus bundles. It is 4 or 5 spears wrapped in one strip of bacon and baked at 375 f until the bacon looks crisp. My husband doesn't like asparagus, so I make a cup of smashed bacon and cheese broccoli for him. Boil 1/2 cup broccoli and put in 1 corner of the pan the asparagus is being cooked on. Smash the broccoli with a serving spoon. Sprinkle on some cracked black pepper. Now add raw chopped bacon to your liking and some shredded parmesan cheese. The two vegetables should be done about the same time, but keep an eye on the broccoli. Hope you like the sound of these.
Mandy, the Rice, it's called Stick of Butter rice. Don't be afraid of the "stick" . I've also seen many, and have done myself, just put the stick of butter in the center and don't cut it up. But I do fluff and stir up the rice once done. YUM!

I found a cheesy potatoes recipe while scrolling through Facebook reals and my husband and I have eaten them multiple times in the last few weeks. I even changed them up and added a kielbasa sausage, which we ate as a casserole meal. So good!

I've been making baked zucchini like that for quite a while, but I also add garlic powder or just use garlic salt along with the pepper and bake as you did. We love it!

I love to saute zucchini and yello squash together with olive oil or avocado oil, salt pepper and garlic powder my family loves it, tried your green beans last night and they love them said I could not make them any other way.

Mandy I’ve been making this for about 45 years. I DO use a whole stick of butter, melted first, than add the rest of the ingredients. We call it “dirty” rice and it goes great with baked chicken! Thanks for the other two sides.
If you slice the zucchini thinner and put in air fryer... Makes chips type!!!

I haven't made the Fiesta Corn Casserole as when it comes to corn, we usually just eat plain corn. However, with the Zucchini my Mother in law's friend shared a recipe that is very similar to the one you just posted except she adds finely diced onion, I add onion powder because I rarely have onion in the house (picky eaters who don't like the texture but are okay with the flavor). And pretty much the same with the rice...we use onion powder and beef bouillon instead. I might try the corn casserole this week as we're having Pork Carnitas.
I add slivered almonds to my brown rice. And sometimes a can or two of mushrooms.

Love the brown riice, canned beef consomme here is over $3 a can so quite pricey, I've made it using french onion soup and home made beef broth and it goes down a treat. I'll need to trythe zuchini (we call them courgettes) with parmesan, they looked grreat. Cant wait till friday now to see what you're making to go with that corn casserole. I use a whole stick but I am also doubling the rice and the consume and French onion. I toast my rice in the butter and then I put in a baking dish. It makes the rice taste nuttier.
