The Ultimate Curried Duck | Taste of Trini

  • Hi everyone! First of all, sorry for this late upload. Happy Indian Arrival Day to everyone in Trinidad and Tobago. To our ancestors who toiled the sugar cane fields and kept their rich culture alive, thank you for the vast legacy you left for us.
    I am sorry this video is long, I wanted to ensure that I gave a thorough explanation on cooking a perfect Curried Duck. Hope you enjoy this video. Be sure to leave suggestions and comments below.
    Here's what you will need:
    1 duck, roasted and cut up and washed with flour & limes/lemons/white vinegar.
    1 tablespoon of salt
    4-6 pimento peppers
    1 tomato (optional)
    2 tablespoons of duck and goat curry powder (1 tablespoon to season the duck and 1 tablespoon to chunkay)
    2 tablespoons curry powder (1 tablespoon to season the duck and 1 tablespoon to chunkay)
    4 teaspoons roasted ground geera (2 teaspoons to season the duck and 2 teaspoons to chunkay)
    4 teaspoons black amchar massala (2 teaspoons to the duck and 2 teaspoons to chunkay)
    1/2 cup of green seasoning
    1 teaspoon coconut oil
    1 onion, chopped
    3-5 curry/karapillay leaves
    8-10 shadon beni/bandhania leaves, chopped
    10 cloves of garlic, minced
    2 scotch bonnet peppers
    5-6 cups of boiling water
    1 cup of coconut milk (optional)
    1/4 cup of chopped scallions/chive

    I don't really read the comments. But people who commented on the pot, don't know what they are missing out on. Cooking in that "iron" pot that you have or a well seasoned cast iron pot gives the food such flavor. especially if you are making traditional foods. A friend gave me a hand made iron pot from Trinidad as a wedding present. I love it!

      my mom has a pot like your old one too. you never cook indian curries in non-stick pans you need it to char a bit

    fantastic job promoting our food and culture, ignore the haters ( you can't win them all)
    I love how genuine you are, from the way you speak to your cookware, its never seems staged to me ( the mismatched and sometimes dated dishes takes me back to my childhood. might i suggest that initially when you add water to any meat that's being cooked always use warm/ hot water, cold water reverts the cooking process, also if you cover the pot n reduce the heat the meat would release enough water, it's a slower cook but so worth it, keep it up, looking forward to another video

    Girl my iron pot is over 70 years old and still going strong . I'm not giving it up for any new pot. The sweetest food cook on that pot and I'm alive and going strong. I'm not buying any shiny aluminum pot to get any heavy metals tiny food and body.

      There is a big difference between wild duck and cultivated duck here in the UK. Wild duck is generally tougher and more gamey in flavour, where cultivated duck is much fattier and usually much more tender. I'm sure this must be true in many countries. For a dish like this I think wild duck would be really good.

    Great job in cooking that duck. Its hard to get right tenderness. I guess the other pronunciation is "bhoojay" means to fry. Dhal, rice and duck is my favorite.

    Omg .. do people really try to shame you about your pot? People are so silly. I have a pot like that which belonged to ny mom. It's older than me and it makes the best food. If anyone made fun of it, I'd probably hit them in the head with it. You do a great job. Keep up the good work. 👍👍👍

    Hi Taste of Trini. Excellent video. I usually dress my duck the same way. You know the need to keep some duck fat in. I find the Muscovy duck has a splendid flavour. You don't just buy a duck.

    I call my cast iron pots ( set.). my "black pot " . It's the all-time go-to pot . You know you'll never please everyone. Girl stay down to YOUR roots.

    Hello you said to ensure the curry is cook , but you season the duck with curry . Curry needs to cook in the first stage of the process. Just letting you know my way .
