Geera Chicken Necks || Cutters (Appetizers)

- Chicken necks are commonly eaten in Trinidad and Tobago and it's prepared in various ways. Usually it's cooked curried along with the rest of the chicken, put into soup, cooked in geera (like this recipe) etc.
What you'll need:
2 lbs of Chicken Necks, cleaned and washed with lime/lemon/vinegar
10-15 Shadon Beni/Bandhani Leaves
15-20 cloves of Garlic
2 Hot Peppers
4-6 Pimento Peppers
Curry/Karapillay Leaves (your preference)
2 teaspoons of Ginger, minced
1 small Onion
2 stalks of Chive or Scallions
2 teaspoons of Curry Powder
2 tablespoons of Cumin Seeds
2 teaspoons of packaged Roasted Ground Geera
2 teaspoons of cooking Oil

I love it in many ways especially pressure cooked for a few minutes.
The smell of freshly roasted and grounded geera is so heavenly. I need to make geera something soon.

Oh yummy!!! I also believe that the seasoning soaks into the bone which makes it extremely flavorful. Ppl call me crazy because I pound up my seasoning fresh everyday. When I was living in Trinidad, I would blend seasoning for the wk. But when I moved to Fl, I didn't have a blender in the beginning. So I bought a mortar and pistil to make seasoning. It was the best thing I have ever done in cooking. Like u said, there is a old-time, traditional taste in the food. My family and friends tell me that I have too much time on my hands to do this. For me, it's WORTH IT 😉😋
Nicole Ramcharitar Yes, that is true. I love doing it too. My mom never makes green seasoning ahead of time, she grinds it fresh on her sil and lorha.

Chicken Necks are so good when ever I roast a chicken in the oven. Those little necks get all the flavors and seasonings and they get nice and roasted. This recipe sounds delicious though. I've never seen chicken necks sold by themselves here in Miami only Turkey necks.
27thAve Agreed. They absorb so much flavor. You can check out the West Indian markets close to you or ask other Trinis if they can direct you to find them.

Kempo Kamini Thank you for watching! Ovens usually have a pre-heat button and if it doesn't, when you set the temperature you want, use a oven thermometer to tell you when it reaches that specific temperature.
I live in Vancouver, Canada. I'm in love with Trini cooking, but it's so difficult to find the ingredients to make most of the dishes. Ingredients such as fresh Scotch Bonnet peppers, fresh pimento, and Culantro (Shado Beni) are impossible to find.

Yes basically all our chickens are halal in Trinidad
Did you find these in the US or are you filming in Trinidad? What kind of store if in the US? I shop at the Asian groceries for less mainstream cuts of meat, but never saw necks.
