      This should be considered highly-processed food, might not be as healthy… high heat, darkly roasted, margarine(quality?), sesame in high heat🤨

    Results never betray an effort..❤ The tough process produces truly delicious coffee.For Indonesians who traveling in Penang,please stop by and buy it as a souvenir..The taste of this coffee is very different from Indonesian coffee .Betul betul kopi yang wangi dan sedap..I've tasted it before ❤

    Your video evokes a sweet ,strong unforgettable smell....a memory of my childhood day.Occasionally behind the backlane we come to witness the kopi tiam towkay personally caramelized their coffee beans in a special metal drum .With added butter n sugar to the charcoal fired hand rotating bin.I still vividly remember the sweet aromatic roasted coffee in manual rotation.Its job was laborious but smell fantastic.

    6:05 I know butter is a popular choice for the roaster in south east Asia but no roaster in the West does that. Actually they don't use any additives at all.

      Not true, Thailand is SE Asia and has normal roasting as does Laos, Cambodia and Vietnam. This is some strange disturbing stuff I just watched. Looks a bit like the junk here sold as oliyang. Bad beans cremated with corn kernels and such and drank down with lots of sugar.

    Oh, used to travel to Penang for work years ago & got to try a lot of local foods, but I don't recall getting to try this coffee. Looks like I missed out on something special!!

    Coffee is grown in Malaysia since the 19th Century when it is known as British Malaya. At that time, the predominant cultivar was the famed Coffea Arabica. Then a type of fungal infection known as Coffee Rust devastated the coffee plantations in British Malaya. Coffea Liberica cultivar replaced Coffea Arabica as it was proven to be resistant to the coffee rust. Since then, it is the predominantly coffee cultivar grown in Malaysia. However the taste of Coffea Liberica is not as palatable as the taste of Arabica or Robusta. So the liberica beans are roasted in such method with sugar and margarine or vegetable shortening to create a unique palatable taste. The resulting coffee is strong and flavorful.

      @@MrLantean I have already found bitter coffee to the charcoal point in my country, I don't need to travel to try it. I can feel the bitter taste just by seeing this burnt coffee. It's a shame, as the beans were of poor quality and could have been roasted to the right degree.

      @@vitorpanke7384 Are you from Spain or Latin America? This is torrefacto roasting method. The purpose is to enhance the shelf life as well as enhancing the flavor of lower quality coffee. I read that coffee in those countries are roasted in such method when sugar is added at the final stage of roasting. The roasting method in Malaysia is a variant of torrefacto method. The difference is that only sugar is added during the torrefacto method in Spain or Latin America while in Malaysia, margarine, vegetable shortening or butter is added besides sugar. Those additional ingredients perhaps masked the smell of burned coffee as well as the burned bitter taste of coffee during the roasting method. Perhaps you should experiment using such method and compare the taste to find out whether the taste is same or different. About the torrefacto coffee in Spain, I have not tasted such coffee so I will not make any comment on it.

      @@MrLantean I'm Latino. In Brazil, coffee is traditionally roasted at charcoal point. This leaves the coffee very bitter and with a strong burnt taste. I know the taste of coffee at this roasting point well. I can feel the super bitter and burnt flavor just by seeing the color of this coffee.

    So many critics. I have been to Penang and it is delicious - assuming you like diary and sugar in your coffee - a dessert coffee. The beans are NOT burnt. That is the sugar turning black. Also the seafood in Penang is superb.

      @@SilvaPereiraTiago coffee is roasted at 356°F to 540°F (180°C to 282°C) which is above the temperature where sugar turns color (caramelization or burns).

      We in the Middle East do not make coffee this way. We do not add cardamom to it and leave it blonde in color... With all due respect to this method, you have all my love and appreciation.

    Interesting video! It seems such an aggressive method of roasting, so very dark, and i was surprised at how light the grinds looked after being ground. Is this a very bitter coffee? I am genuinley curious to know, being from uk, im watching thinking that this looks like it is too far roasted compared to what im used to, but without trying i would not be able to know! I would love to try it, I can see how rich the drink ends up being. Thankyou for sharing.

    한국의 콩엿같은 모습에 쇼킹한 제조공정이군요. 나도 커피인으로 로스팅만 30년 했지만 우리가 금기로 여기는 모든것을 가미한 커피제저법에 충격입니다. 결국 가향성 커피인데 꼭 한번은 시음하고 싶군요. 역시 커피는 모두가 다르다라는 것을 또 한번 느끼게한 영상입니다.

      Aku orang Indonesia. Metode ini hanya digunakan untuk Kopi2 Robusta Aceh grade 2-3 yg berkualitas rendah. Campuran dr Margarin & Gula akan menutupi kualitas kopi yg kurang bagus. Metode ini digunakan juga di provinsi aceh Indonesia menjadi Kopi Khas aceh untuk kedai kopi non premium dan sangat murah. Metode Malaysia yang karamel gulanya menyatu dengan kopi sampai bener Gosong Hitam seperti arang😂. Kopi aceh Biji kopi dark roasting terpisah dan mengkilat.

    我小時候最早接觸的咖啡就是新加坡乾奶奶從新加坡帶來的狗頭牌咖啡。據她說,裡面可能還加了烤焦黑的玉米粒,一起研磨。
    但我沒想到居然有加那麼多奶油,但不會像越南咖啡奶油味很明顯。

    Is this the same king of Nanyang Coffee you can get in Singapore, or are there differences between the Singapore and Malaysian roasting process?

      It's the same. The only difference should be the exact recipe and beans source which vary for each companies. Some don't even use butter, only margarine and some add salt (probably to compensate the use of salted butter).

      Margarine (vegetable fat) and sugar. Both are bad for health. I've been drinking this coffee in malaysia for long. Stop immediately once got to know that they are adding margarine.

    Liberica beans need this treatment because without the added fats and sugars, they taste too bitter and herbal. I tried liberica on medium roast and it tastes like tree bark.

      Yes considering I lightly roast beans, grind them and just add water this seems like a unhealthy mess.

    Di kampung saya pure coffee roasted manually. No butter nor wijen (sesame), only coffee. Then grinded lah

      Harsh and bitter if drunk as it is -(no milk, cream or sweeteners). Even more so if drunk ratio 1:1 water and ground coffee. Taste chocolaty when added with appropriate amt of condense milk , or sugar and evaporated milk.
