      Get a bunch of pasta that is about a quarter thick. That is your average portion for one person. Always worked for me and my family

      Wacky question. If fiber helps our glucose levels raise safer, why don't they lace cupcakes with Metamucil? Sugar is added in all the processed first world food we eat, why can't they add fiber to match and maybe cut down on the obesity epidemic? Is it different somehow that I don't understand or is it really that easy to make sweet foods less bad for you?

    Now see, THIS is the type of stuff that needs to be all over your channel -- NEW, surprising, and beneficial information with a decent study behind it. Not all this 5-year-old "lets re-spark the SCARE people had 5 yrs ago when they first thought this was the case, but was proven wrong long ago" stuff. This is the age of new information. It should be quite easy for you to find interesting nuggets like this.
    As well, Ive been eating most of my pasta cold lately, simply because I cook way too much initially, being hungry, and then not being able to eat nearly enough. I actually enjoy certain pastas cold (Macaroni? Nomnom). The only pasta I think I hate after cooled/reheated.. is spaghetti. No idea why, it tastes so different.. so.... blegh. But looks like Ill adopt this more often.

      LastBref they do employ a large number of scare tactic headlines, but they usually do a pretty good job of explaining it realistically. There have been a few where the title was such a reach they didn't accurately describe the content of the video.
      I really don't care, I see much worse on TV "news". While a little hypey at times d-news seems to have struck a decent balance of entertainment and news.

    does the "resistant pasta" effect work only on pasta? or will it work with reheated rice or reheated bread?

    I think that "fresh pasta" is not what most people are eating to begin with. I'd need to see how off the shelf dehydrated pasta (the hard stuff most of us boil) is any different, and how whole wheat pasta compares as well. And of course, an actual scientific study over years would always be helpful. For now, this has the same weight as the junk you see on Doctor Oz.

    For reheating pasta, I keep the noodles and whatever sauce i'm using separate, so when I need to heat it up, I run the noodles under hot water until they're heated again. Pasta pro-tip :D

      pro tip #2: run it in a sieve under a tap then toss the pasta in oil so they dont stick.

      Honestly, that sounds like a waste of water to me. I recommend putting the pasta in a pot with a small amount of water and a bit of your preferred oil, then heating it up while stirring, so the pasta doesn't burn/get stuck at the bottom of the pot. The water vapourizes into steam and it tastes fresh again :)

      RubbaNoze Adding oil to pasta water has been shown to not have much if any of an effect on whether it sticks, the oil when initially cooking is so the pot doesn't boil over.

    I cook my pasta "al dente", that is, not quite fully cooked. After I boil pasta. I actually rinse it with warm/cold water to wash away all the sticky stuff, after which it's a lot better tasting when you add even a tiny bit of butter or oil. In doing so, the temp drops pretty low, so I then microwave the whole thing and it's quite delicious. I've actually been eating nothing but pasta the past while (with occasional fast food). I don't have the fastest metabolism but I'm 140lbs/63kg and I've been losing weight, which I didn't really expect from this kind of a diet. Just keep in mind that I have a busy schedule and don't eat all that regularly. I have no problem with energy levels either, though I do drink coffee throughout the day. My staple thing with pasta is to add something like tomatoes/meatballs/olives in some combination plus light seasoning, usually lots of pepper and a bit of salt.

    I like reheated lasagne waaaay better than ''fresh'' (?) lasagne (and I love fresh lasagna). I think most foods taste better reheated actually. I love leftovers :)

      Try some cold rotini or penne with just olive oil and red pepper, a little salt or parmesan.
      It's really good, it's got a sort of chewy texture. Now I'm hungry haha

    I have been eating Fiber Gourmet pasta for about l0 years or more. It has only 130 calories and 18 grams of fiber. This pasta ( spaghetti,penne, rigatoni, etc.) is made with resistant starch already and is delicious. The way my daughter and I eat this has kept us thin and happy because we love pasta and don't have to give it up. This is what I do before I ever heard of cold to hot, etc. We eat about l0PM but Idon't want to be in the kitchen cooking that late, so I make our meals and put them in nice glass serving plates, with the 2 oz. dry of spaghetti, which makes a big serving, with sauce or whatever you want on it, and a lot of veggies, at least 1 cup of more. Then I put our bowls in the fridge and let them sit all evening until l0 PM when they are very cold, we leave them out for about 2 hours to come to room temperature , then heat about 3 min. in microwave and it is delicious. There is NOTHING wrong with a reheated meal, the only thing we heat separately is fish or that type that will over cook. I guess that's why I haven't gained any weight back. Eat that twice a week with other meals and you are a winner. Its a little pricey, but you are only eating 2 oz. dry each a serving. Check their website at fibergourmet.com

    Just cook it "al dente" and it will have the same effect. The sugars will be released much slower than with overcooked pasta. Also, it will be benefit your digestion process, as you will digest it much faster than with overcooked pasta. Italians do it also for this reason, not only taste.

    Okay, I have worked in the food industry for 12 years, during that time, I did work for a four star restaurant that re-heated all of its pasta...mainly to retain the quality of the original, without having to spend the time, common practice really. The point being that the re-heated version was never received in a dis-favorable fashion, maybe because people did not feel like they were sick shorty after, as I commonly do when eating fresh pasta...just a thought

    at most bigger restaurants pasta is cooked, cooled, then portioned out so it can be reheated in whatever dish you ordered

    I did it with rice and the result was great when it comes to digestion. My intestines don't handle it well and bulge out the abdominal mesh when I eat rice but after learning to refrigerate it for 24 hrs before eating it I had no issue at all 😁

    Reheated pasta is the bomb. I like to put some spicy olive oil in the pan and put cold pasta in it, then add a little bit of extra sauce on top.

    I eat reheated pasta all the time - it tastes almost as good as fresh pasta to me, and i don't need to take the time to cook it :)

    I'm an employee at a Noodle's and Company that is exactly what we do. We cook it, cool it, then cook it again to order. Didn't know that it was specifically more healthy, that's pretty cool

    What does she mean "fresh pasta"? Fresh pasta is much different than dried pasta. She doesn't mention anything about dried or fresh pasta.
    When I worked at a restaurant we would technically "re heat" the pasta during service. I would cook off a large batch of dried pasta, cool it down, and keep it in the lowboy ready for service. when an order came in I would make the sauce, then toss the pasta in the sauce, thus reheating it.
    Some clarification would be nice, as "fresh pasta" is usually used to refer to pasta that has been made, rolled, cut and then cooked before it has time to dry out, usually immediately.

    Cool! Maybe I should try an experiment. I have type 1 diabetes, and pasta has an explosive effect on my blood sugar level - so much so, that I need to take my fast acting insulin 15 minutes before I start eating, so my blood sugar is falling before I get any food in my stomach. Normally I can just take my insulin right before or right after eating without any problems.

    Now I love you. Finally someone is doing something for the leftovers. I just had pasta cooked earlier today. It was good and obviously healthier. Some people want only raw food and some say cooking the food was one of the great inventions for human nutrition in order to digest it. Both in combination surely is the best. What happens to a twice heated pie? Chicken in sauce cooked, cooled and heated again tastes the best, do you know if it's good or bad?

    By the way, since I noticed this statistical news, about a decade ago, I was eyeing into their highly boiled foods and they were red. I followed their red saucy kitchen foods result was that I was feeling better and smoother feeling on my skin.

    Restaurants pre-make your pasta, rinse it off with cold water, and store them in 5 gallon containers in the frig. When you order pasta, they grab a handful in a strainer and they dip it into their pot of boiling water. As they prepare your dish, in a few minutes, they strain your pasta, add sauce and cheese, poop into the boiler, and out comes your baked ziti in 5 minutes.

    This is really interesting to know. My husband and I may try this for a while and see how it goes. Also, if you don't like the way microwaved pasta tastes, reheat it on the stove in a pan with bit of olive oil, then add sauce and heat until desired temp is reached. Other than pre-heating the pan, doing this only takes 3-5 minutes. If I can do it (hubby is a chef and I suck at cooking) then it can't be that hard...

    Reheated pasta is fine as long as it was reheated in water (like recooking in the pot) or with a sauce already on it if you're microwaving.

      lol nothing special just let the pasta freez, & like fried noodles from china itll soften when you put the warm sauce, but you can still feel the coldness of the pasta in your mouth

    I love leftover pasta because it is like eating fried noodles. What I wonder was this study done with just the pasta itself or with a pasta dish that was served fresh, cold and reheated. I would suspect the resistant starch effects would be the same but the fats in the meal would also be processed further so you would have less transfats and more cisfats. Also some resistant starches when fried actually help to break down transfats and triglycerides further like they do with French fries cooked in an oat flour/cornmeal/wheat flour mixture.

    Reheated pasta is probably my favorite thing in the world. If you mix pasta with a bit of carbonada and some tomatoes, and then heat it up with some cheese, it is freaking amazing

    I have bought these meals that have pasta that have already been cooked. Placed in plastic bags and then you reheat them for what ever meals. The brand is Amy Chun's I think, all various kinds of asian dishes involving noodles of some kind. I love Udon noodles the most.

    i cook in large batches to save electricity, i reheat all my food and i cook once every 2 days, this is great news.
    i wonder if this is the same case with rice..

    Some reheated food taste better, for example lasagna I always find that reheated it taste better. So in my case this is awesome. Thanks again D news team always to the rescue of us average folk who like science but didn't go to college for it... I'm an A&P tech and also a diesel Mechanic.

    Leftovers are so good! Especially frozen leftovers that where left out just a little bit before freezing. I know it sounds weird, but by doing that bacteria and freezing help breakdown the food on the small scale, and thus intensify the flavor. Btw you can't do this with all food. But wheat and starch based meals? Oh you bet it's good.

    Its not all about leftyovers or reheating your pasta, just let it cool down a while after cooking, and/or rinse with cold (clean filtered) water, don't use nasty straight tap water.
    Keep the pasta semi-covered while cooling to retain some moisture and not get to sticky or hard. When reheating Pasta, spray a little water on it, reheat it on low short time in a sauce pot, oven, or toasty oven. Don't use Microwave, it destroys the texture of pasta and is nasty anyway. If your having Spaghetti sauce with your pasta, try it cold.

    I've eaten plenty of reheated pasta, and I have to say it often tastes better than the fresh pasta, if it's been in the fridge overnight that is.

    This deserves a thorough study!
    - Do properly controlled conditions change the outcome?
    - Does it matter if it's frozen or just chilled?
    - Does it matter if it's cooled before it's cooked or only after?
    - Does it only effect pasta made with wheat flour?
    - Does the presence or absence or type of sauce make a difference?
    ...etc. We need 1,000 volunteers to eat pasta, dammit!

      There's a newer study now that examines more people, 45 test persons, and get similar results. Doesn't answer all of your questions though. However, the conditions in the experiment were like so:
      Cool down in fridge for 24 hours after cooking and reheat in microwave. The kind of flour shouldn't make a difference in theory, but I don't know if they've tested it, however they expect to get the same result with other starchy foods such as rice and potatoes, so type of flour shouldn't really matter. What matters is that the food is starchy and the starch changes structure during the process, turning much of the starch into so called resistant starch that is not as easily digested by the stomach and behaves more like fiber.

    Interesting... When I'm done cooking my pasta I run it under cold water to stop the cooking and keep it from getting sticky, I then warm it back up with hot water and let it sit in that for serving if I made a large batch. Wonder if it gets that reheating benefit.

      Winner of a video, I have been researching "can you eat brown pasta on a diet?" for a while now, and I think this has helped. You ever tried - Piyandon Acclaimed Prepotence - (do a search on google ) ? It is an awesome one of a kind product for discovering how to say goodbye to your embarrassing manboobs minus the normal expense. Ive heard some unbelievable things about it and my colleague got excellent results with it.

    I have found that some foods taste better the next day. But it really matters on how one heats it up. I mean think about if you going to micowave it, or warm it up with butter or oil are you really getting any benefit. Again only some food, sometimes.

    They never said how they reheated the pasta. microwave or stove top?? I always just use the stove top and reheat my noodles and sauce together with a lil oil and it comes out good as before

    I wonder if this would apply to other grains as well; I could see it being different since you don't cook most of them in water and there are differences in surface area etc, but that would explain why cold pizza tastes good.

      They expect that it applies to all starchy foods, since it is the starch that changes structure and turns into socalled resistant starch.

    Re-Heated Pasta is a little dry, and feels sticky. Like, it'll just clump together and instead of eating a few strands of pasta, you're biting into a sphere of the stuff.
    Still tastes the same though, so maybe not a bad idea.

      Put a glass of water next to the plate in the microwave.
      It'll prefent it from going dry.

      I just turn my kitchen tap on hot and wash the pasta first, it separates and moistens it so it doesn't clump as much :)

    So why not just cook the pasta normally, strain it into some ice water, then put it back in the pot and heat it up again? Totally works right?

    I think its not so surprising. cooking it raises the food to a higher temperature compared to just reheating it. Or maybe its just a different phase of starch. Can be represented with a time temperature transformation (TTT) diagram. Heating it breaks it down so I imagine the broken down form has higher energy and that form is the most stable at that temperature. Over time the starch reforms from small stuff into the fibrous stuff. However the pasta doesnt go back to being hard uncooked pasta since there is still water in it. They really should test the pasta chemically (I dont know the chemistry but I hope there is a way to do that) rather than merely testing the response in humans like a brute force scientist.

    I did not even know that people had a problem with reheating their food till after watching this. Sure some food is best eaten freshly cooked but pasta can retain its taste for days.

    Does it matter what way you cool your pasta? I mean, do you get the same effects if you cool the pasta by rinsing it with cold water, leaving it to cool in room temperature or leaving it to cool in the fridge/freezer? Also, how long should you leave it to cool before you reheat it--and how "cool" should it be?

    But pasta is a cooked in the first place and cooled down before it reach the store. So how can that be possible? Unless doing it couple of time increase the fiber-like structures?

    O WOW, I love recooked pasta. I refry it all the time if my wife makes extra. I always steal it for a meal. When I showed her your video she pronounce my love for cold pasta. Thank you very much on this one and many others.
