Appetizing fried edamame beans for summer. (Recipe Included)

  • Frying the beans look easy but to make the dish look good requires skills! The trick to keeping the beans green is: after removing the shells, soak the beans in ice water, and when you stir-fry the beans, add a bit of chili to make the dish look, smell and taste delicious.
    Step 1
    After dicing the pork, marinate it with light soy sauce, dark soy sauce, sugar, cornstarch, sesame oil and Shaoxing wine for a while.
    Step 2
    Remove the outer layer of the bamboo shoots and dice them into small pieces and set aside. Cut the dried beancurd, dried mushrooms and birdseye chillies into pieces for later use.
    Step 3
    Prepare a pot of boiling water, add a bit of salt and oil, boil the edamame until done. Rinse the edamame shells off with water and soak in ice water. Set aside.
    Step 4
    Heat wok with oil, add the diced pork, then the diced mushrooms, diced dried beancurd, a bit of oyster sauce, then add the edamame beans, add a bit of wine onto the wokside, add the chillies, stir well, taste and adjust the seasoning accordingly.
