Step1
Place bell peppers over flame until skin blackens, seal in plastic bag, peel away the skin and wash.
Step 2
Trim away fats and tendons from chicken thighs, cut into squares.
Marinate briefly with white pepper, salt, egg white, and cornstarch.
Step 3
Use a brush to remove dirt from mushroom and slice. Cut onions and peeled bell peppers into squares.
Step 4
Melt butter in saucepan, gradually add flour and stir until mix well, gradually add milk, use sieve to remove lumps so that the sauce is smooth.
Step 5
First fry onions in hot wok. Fry mushroom in butter and oil, add bell peppers, onions and white sauce. Mix well. Use another wok to fry chicken till 70% cooked, remove black bits and add into white sauce.
Step 6
Add chicken broth, lots of white pepper, right amount of salt, cook until chicken is cooked.
Serve with white rice.

這是我的童年回憶,小時候父親帶我去餐廳,都喜歡點白汁雞皇飯。現在每次見到這道菜,都會想起父親。
煮白汁時要用放置室溫既牛油,煮溶後加麵粉細火加熱時用打蛋器不停攪拌(如果用易潔鍋記得要用矽膠打蛋器)。成為麵團後一邊用打蛋器攪拌慢慢加牛奶用中火煮至杰身就唔會有粒粒!最重要由細火開始,你用了大火煮,麵粉表面加熱太快表面熟了形成了一層膜鎖住了裡面的生麵粉就會起粒(生粉水唔可以用熱水開同理)。支持ar so!細細個就睇你上電視教煮餸 🥰

說真的,阿蘇的廚藝進步空間很大。單丷炒雞肉就知,首先要猛鑊陰油,炒雞先唔會黐底。
佢得把口,一向唔識煮, 只係白汁用牛奶都笑😅
我煮白汁會用磅,牛油同麵粉一比一,煮溶牛油之後落麵粉,用蛋發攪,攪勻晒又聞到香味就逐少落奶,一路落一路攪,滾咗先再落(我估你嘅火路慢咗少少),直到夠杰為止,咁就唔會有粒
甘啲奶咪熟晒又易燶囉,貪佢易燶咩,好學吾學😂
秘訣係一定要用手動打蛋工具,牛油溶後熄火先落麵粉炒
Chicken A La King! Next time, when you add milk into the roux, try using a whisk, it will help to minimize the lumps. It works for me.

Hi hi, trick for a smooth white sauce is that u need to the pan off the heat before adding milk, little by little per your instructions. Once all the milk is added, then turn on the fire and continue. Guaranteed no residue or lump using this trick! 😉 love u! 😘👍

let me give you a suggestion.. fry a few slices of bacon, then cook chicken in bacon fat...sprinkle fried bacon bits on top of the sauce when done

Hi, a whisk and low heat is needed to cook the roux without clumps of flour sitting on the bottom of the pan.
For extra depth of flavour, some ppl infuse the milk with onion/bay leaf/cloves/peppercorns.

這个白汁飯,將雞肉改大虾,叫印度皇飯,也非常好食,生虾要先過水五成熟便可,否则出水嚴重,影响口感。白汁超容易, 罐頭金宝雞湯便可以,超级懶人食谱。😂😂
