    ive cooked most of our meats without binders. One less ingredient to add. hehe. Nice video!

      i like binders coz it can hold more seasonings, whether it be a full on rub or just basic salt&pepper. Sriracha is a binder you can definitely taste and its great with salt pepper and granulated garlic on any meat, smoked or roasted. You taste more of the binder if the meat is roasted over smoked. the smoke kinda makes all binders taste the same unless its really sweet like ketchup/bbq/hoisin, or really spicy like sriracha.

    ppl do it so the spices stick better i think. the mustard doesnt add taste. you actually dont even taste the mustard.
