Today, we are making 18 freezer meals to fill my freezer and feed my family while we move. Need homemaking motivation? Join me while I'm batch cooking freezer meals and make freezer meals from scratch. These recipes are easy freezer meals for beginners.

Fiesta Soup:
Brown 1 lb ground beef and 1 chopped onion. Add 1 packet ranch mix and 1 packet taco seasoning. Homemade is even better! Add 1 can each and do not drain!: pinto beans, black beans, kidney beans, corn, rotel. Add 2 c chicken stock or bone broth. Heat through and serve with sour cream, cheese, avocado, lime and chips.
Lasagna -
I doubled this recipe. Brown 1 package italian sausage and 1 chopped onion. Add garlic and remove from pan. Cook down chopped veggies of choice. I used 1 zucchini, green bell pepper, mushrooms. Add sauce (I used 2 jars) and continue to cook down. Mix shredded mozzarella (i use fresh and shred myself) and fresh parmesan. In another bowl, mix 1.5 containers of ricotta cheese (i used cottage cheese) and 2 eggs. Mix together. To assemble, pour a small amount of sauce to bottom of 13x9 in pan. then add a layer of oven ready lasagna sheets (i used gluten free). add a layer of cottage cheese, then mozzarella, then sauce and repeat. Cover and freeze. You can bake at 375 from frozen.

I am an adult who lives with my parents and last year i was home alone for 6 weeks and i knew that i would get lazy with cooking for just myself every night so i meal prepped a ton of meals to keep in the freezer and it was AMAZING. Mostly all Ground Beef meals though. I made the classic Spaghetti Bolognese, Taco Ground Beef with Corn and Black Beans Mixture (which was obviously used for either Tacos, Burritos, Burrito Bowls), Cottage Pie Mixture (without the mash potato) Minestrone Soup. I think i ended up with 5 servings of everything 👌 💖

I do the chili soup exactly the same way. We use shredded chicken instead. I put it in freezer bags and it is a quick easy meal that I can throw in the crock on low for a bit. I serve with cheese, green onion, sour cream, avocados and blue tortilla chips. 😊

This is a great idea , love freezing soups. & pasta dishes . Also I purée vegetables (carrots, zucchini, spinach ) and add it to tomato sauce no one knows it’s there but your getting the nutrients :)

You have to cook the meal after it’s out of the freezer so I wouldn’t precook the onion it will just disintegrate to mush. Also always strain the grease out of ground beef!
I didn’t find the onion to be an issue and i can’t remember at this point if I did strain the beef and just didn’t show it or it wasn’t an issue. We Ate one of the soups for lunch today!

Good to know! Great option if you plan on doing lots of freezing! I wanted to see if I liked doing this before I bought a lot. I do! I also want to get the big things of foil and plastic wrap from sams too!

Freezer meals are always so interesting to me, while saving time sounds so good, do they taste as good as fresh?
I know, I was weirded out by the idea for years. But you’ll only want to make meals that freeze well. Soups freeze beautifully and lasagnas are sold frozen all the time. Potatoes don’t freeze well and I’m sure there’re others things to avoid.
