I just made this recipe..it turned out delicious..thank you...mine took 55 minutes to fully bake..next time I would just reduce the sugar to 3/4 Cup..but other than that...Delicious cake!
INGREDIENTS 3 eggs 1 cup sugar 1 1/2 cup flour 1 tsp baking powder 1/2 tsp cardamom 1/3 cup oil 1/3 cup milk 1/2 cup raisins + 1 tbsp flour (mix & set aside) METHOD 1. Beat the eggs for 1 minute on high speed. 2. Add sugar gradually while beating for 3 minutes. Beat for 2 more minutes until it is pale and foamy. 3. Add the oil and milk. 4. Sift the dry ingredients and gradually fold them into the mixture until it is lump-free. 5. Gently fold in the raisins. 6. Pour batter into a prepared cake pan. 7. Bake in an oven preheated to 180 deg C or 350 deg F for 40 minutes or until test clean with a skewer.
I just made this recipe and other than a little too sweet, it was good. My raisins still sunk but I wasn't gentle when I mixed them in so that was my fault.
