Your technique is perfect from not melting chocolate over direct heat to avoiding whipping the eggs which will cause the cheesecake to rise and then collapse. I make a fabulous cheesecake that has just four ingredients; not including the crust. It does NOT have sour cream. It’s not necessary for a creamy cheesecake. I use a Graham Cracker crust. The filling is just 6 (8 oz.) packages of cream cheese, 7 eggs, 1.5 cups sugar and a tablespoon of vanilla! The secret is, after baking in a springform pan for 1.5 hours at 375 degrees the cake is left in the fridge for a minimum of 12 hours! It comes out very creamy! It was an award-winning cheesecake dating back decades from a now-defunct restaurant in Cambridge, Mass.

It looks Choco deep dark and delicious. My supermarkets don’t carry mascarpone cheese, so I’m trying to find a substitute for the richer fat content. I just read either Philadelphia cream cheese, or heavy cream plus ricotta cheese 2:1 for example. But I wonder about the flavor.

You can do no-bake cheesecakes that require no sour cream or yogurt! They're absolutely delicious, you just set them in the fridge!
