It looks delicious even messy surely I want to try this but is it ok to spread to spread a raspberry jam in middle of the layer of the sheets just to have a contrast of the sweetness, I think it's ok. What is the temperature of the oven to bake the pastry sheets?

Being a European, i'm really familiar with this, in fact, Napoleon cake is one of my top favourites. To make it even tastier, you can throw a nice thin layer of sour jam on the middle layer on top of the cream, something like sour cherry or sour plum jam, which will add a nice note of acidity to the otherwise sweet flavour. You can also add a light milk chocolate drizzle on top. Also, like she said, leave it sitting in the fridge for 4-6 hours before serving, so it'll be easier to cut and will be just right in the balance of moistness vs. crunch! Oh, and you can use a blender to smash the crumble in to nice fine puff dust for a more uniform crumble-cover :)
