The best time to immerse yourself in all things maple syrup is in the spring in Quebec. Usually March. This is when they harvest the syrup from the trees and Quebecois enjoy a festival of traditional meals at what is known as a cabane au sucre aka sugar shack. It's basically a feast where everything (ham, eggs, pancakes, etc) is covered in maple syrup. It's damned good eating! Fresh syrup is even served like lollipops on sticks. There are even more fine dining options now with chefs who have modern takes on Quebecois meals that they serve (although I think cost more $$$). You should really return here in the spring! The maple water is the base of every maple product. L'eau d'érable récolté des arbres doit être bouilli afin d'en évaporer la majorité de l'eau et ainsi avoir le sirop d'érable ou autres produits de l'érable. Donc il n'est pas étrange/bizarre d'avoir "even maple water". Le Maple3 (et ses concurrents) est le produit d'érable le moins altéré, le plus original.
