Thanks! I love this kind of system, where tearing things apart and customizing them are a large part of the fun. There is so much to do and so many ways to do them it was a lot of work to even keep the size down to 1/2 hour (it's really 37 minutes).
Our projects do a good job. They popularize engineering creativity. Gamebuino has its own history, unique spirit, and community and is also worthy of attention!
Just received my espboy 2 today it only took about a month to get it not bad. Just had my first play neat little device looking forward to checking it out and see what all the ESPboy community has to offer thanks Rob for the video and peaking my interest 😀
It is possible to install platform firmware to ESPboy and add many games for some of these platforms to the ESP8266 internal flash drive using the Aruduino IDE and LittleFS/SPIFFS uploading plugin. The ESP8266 internal flash drive can hold about 20-30 games for ZX Speccy, 40-50 games for Chip8/Schip, about 30 games for LGE. But for some systems, there is only one game at a time (Arduboy, Gamebuino, GB). But you can always download any game anytime from AppStore)

A long press on 'A' in AppStore mode is equivalent to 'Enter' :) ESPboy holds many secrets and opportunities to explore :)

Hard to say -- Oversea shipping has been super slow and inconsistent for the last 6 months or so.
