None of what you've criticised him for matters as long as the fish tastes great. And given that he has 1 Michelin star, we know his food tastes amazing. Remember that the Michelin guide is highly biased towards French/European cuisine, I've had meals at 2-3 star Michelin restaurants (most recently the Dorchester) and I can comfortably say that there are some good quality 0 star Indian restaurants out there that serve tastier food (and for alot cheaper).

Also you've criticised him for not trimming the fillet for even cooking, plus starting it on a high heat. Maybe the fish doesn't need to be trimmed BECAUSE he's started it on a high heat? And he flattened it slightly using the spatula for even cooking. And not caramelised? The fish and it's skin are practically half brown ffs. Plus he added butter during the frying for extra flavour/moisture.
Maybe go to his restaurant and try the dish, I'm sure you'll be annoyed by how good it is.

@theshango1986 WHEN DO YOU EVER PUT FISH IN COLD OIL? have you ever got up off youtube and tried to cook in a kitchen?? If you caramelise the skin you will burn the spices which would bring bitterness to the entire dish. Plus its a method of filleting where you get the fish like that.
Finally, if you know enough about him you'd realise a lot of how he cooks uses french methods, and everything he shows is a mix between french techniques and indian flavours. And please go ahead and argue with the one guy who has defended the only indian michelin star in the country for 8 years running. i dont normally argue with people on youtube but im bored on my night off, so here goes: if you put fish into cold oil, you know what happens? the fish soaks up the oil, it basically boils, and you get a soggy, tasteless piece of shit. also, you don't caramelise fish. do you want sweet fish?
