I loved these early UFC's--no weight classes, less rules, and fighters in multiple fights per night. You never knew what kind of a crazy matchup you were going to see next.
Less rules? The only rules were no biting, no eye gouging. That's basically saying NO RULES AT ALL!! Groin striking and hair pulling was legal! RIDICULOUS!
I get that you and many audience members watching don't really care, but it's extremely dangerous for the fighters like this. The current rules are there to protect the fighters. Also these days where MMA is a real type of training, where everybody learns everything, weight class does matter. It's not style against style anymore, it's everybody does mixed martial arts, and when everybody is doing the same kind of thing, weight class comes into it. The time limits came in because of how long some fights started to last. First 45 minutes, then 90 minutes, people didn't especially like watching two guys lay on the ground hugging for 90 minutes. It also didn't fit for the TV format where they kind of needed to know when the fights would be over. Plus the whole random nature of the fights, who you might get at a time where people weren't all mixed fighters yet, and then you had to do three fights that night? One dude may go in and get someone out in 30 seconds because the guy he is against has zero ground defense, then another gets stuck fighting 10 minutes and breaks his hand, and then those two winners go up against each other, that's not exactly a fair contest for one of them. One of them is worn out and beat up and the other mostly fresh. Or you get what we're seeing here, UFC 3, just a mess of injuries and people who can't continue. The championship ends up being between a guy who fought a single fight, and another guy who is fresh and didn't fight at all. With Keith Hackney vs Emmanuel Yarbrough, the gate opened when Emmanuel had him and they reset them across from each other which allowed Hackney to win a fight he was about to lose. When the same gate opens on Royce, they let him keep his position when they restart them. In the end we get a "champion" who only had to do a single fight and never would have survived through the top guys and then the same situation in two fights handled completely differently affecting who would continue in the fights. It's just a clusterfrick. No rules isn't always great. Yes, there is something amazing about the chaos of these old fights. But the fighters kept getting better and eventually they all had to learn the same stuff to compete. That in itself would forever change these types of contests eventually. You can never go back to this, because people learn everything now. Besides, now it's become a real sport. These were just tournament contests. They were amazing contests sure, but not great for the protection of the fighters and they will never happen again because everybody learned from this and found out they needed both ground and standing game. So it's a unique age which has passed and won't really happen again.

The late 80s, from around the release of Bloodsport in 88, and early 90s was about finding out which styles were BS and which were legit. That's how you ended up with Royce Gracie in UFC1 facing a full on boxer wearing high top ring boots and boxing gloves! Gracie annihilated him with ease. Or Pat Smith practically decapitating a "ninja" in UFC2. But that's what the early UFC was: style v style. Problem was that almost none of the styles included serious submission technique even if they included some grappling...except Gracie Ju Jiutsu. And holy crap did Gracie dominate in those days. BJJ obviously proved to be far and away the most effective style for actual fights that could end up on the ground. But even BJJ needed more striking and it became clear that the best style was: yes. But every striker knew he better learn grappling and submissions or he'd lose an arm. Very cool to see that evolution.
Another point of early UFC was to be "realistic" as in simulating a street fight. Thus, no weight classes, no rounds, no dress code, and very few strikes were made illegal. Later on it wasn't just the fighting styles that changed but rather, the adoption of traditional combat sport rules (weight classes, time limits, rounds, dress code) meant that fighters had an easier time figuring out what fighting styles would be effective. Things got a lot more boring and predictable.
