Super-sized, Super-soft Chocolate Chip Cookies: King Arthur Flour Recipe of the Year Review

  • Spoiler alert: this recipe is excellent. To quote my daughter - as she reached into the cookie jar for yet another cookie, "Why are these so good?" Not that I doubted the pros at King Arthur. But are the extra steps (and that extra vanilla) worth it? I'm just a home baker, but I do know my way around a cookie sheet, so here's my take on the 2024 Recipe of the Year.
    Ingredients (my notes/ adaptations in parentheses):
    2 cups/ 426 g light brown sugar
    2 teaspoons table salt (or kosher salt)
    2 sticks/ 8 oz unsalted butter, cut into 1-inch chunks
    1/2 cup/ 113 g milk
    2 3/4 cups/ 330 g bread flour, divided
    2 eggs, cold
    1 tablespoon vanilla (1 1/2 to 2 teaspoons will do)
    1 3/4 teaspoons baking powder
    1/4 teaspoon baking soda
    2 cups/ 12 ounces/ 340 g semisweet chocolate chunks or chips (10 oz/ 280 g is enough)
    In a large bowl, whisk brown sugar and salt together. Melt the butter in a small saucepan over medium-high heat, stirring frequently. Butter will foam, then as the foam subsides brown bits will appear on the edges and bottom of the pot. As soon as the butter takes on a light brown color (mine took a total of 7 minutes), pour it into the bowl with the brown sugar and whisk. The sugar will melt and the mixture will not be totally smooth. To the slightly cooled saucepan (no need to wash it), add the milk and 3 tablespoons/ 23 grams of the bread flour and whisk until smooth. Cook over low heat, whisking, then stirring, until the mixture is so thick that it begins to hold together (mine took 3 minutes). Whisk into the sugar mixture until mostly smooth. Add vanilla and eggs and whisk until smooth. Stir together remaining flour, baking powder, and baking soda, then add to the sugar-butter mixture and whisk until all flour is incorporated. Allow dough to cool for a few minutes, then stir in chocolate chips or chunks. To make cookies: chill dough for 24-72 hours. For colossal cookies, scoop into 85-90 gram balls, about 2 1/4-inches across. For large cookies, scoop dough into 50 gram balls, or about 2 tablespoons. Roll dough between your palms into smooth spheres or, for slightly thicker cookies, into more oblong egg shapes. Allow at least 3 inches between cookies. Bake at 350 degrees until browned at the edges but soft in the centers, 18-22 minutes for colossal cookies, 15-18 for large ones. Cool for at least 15 minutes on the cookie sheet. If you want to skip the wait, prefer cookie bars, or both: Press dough into a lined/ greased 9x13 inch pan at 350 degrees for 34-38 minutes, until a toothpick come out damp but clean.

    Storage: Cookies will stay soft in the center for 5 days; cookie dough can and should be refrigerated for 1-3 days or frozen for months

      I made the recipe three times in the space of a week (the sacrifices we make in the name of research), have other baking projects lined up for this week, and am still considering making more of these.

      No worries - glad you're back! And these are seriously good. Not that I'll quit my all-time favorites (already featured on the channel), but surely there's room in our hearts (and stomachs) for multiple chocolate chip cookie varieties.

    Too many of your alterations to call it King Arthur's recipe. Why bother?

      Fair enough - the rule of thumb is that three significant changes to the original recipe make it one's own. As I mentioned, I did make it as written before making the slight changes that I showed. But I wanted to credit the original source as the KAF test kitchen's big ideas/ innovations were certainly not mine!
