You are correct about spinach. It is far too high in oxalates. You'd be better off with baby arugula which has a similar taste. I'd recommend Sally Norton's book called "Toxic Superfoods" which explains the dangers of oxalates (its the chemical that plants use to protect themselves.)
A few tips about the recipes - maybe type them in above in case we can't capture but need to write them down (really old school here), and 8 potatoes is a bit vague. Are they little reds, yukon golds or giant russets? Cups on that would be helpful.
