Saffron colour is a symbol of renounce, also it reflects to sun rays and protect our body from heat. Buddhist monks use more colours during changing seasons like yellow, red, redbrown, chocolatey, saffron and orange.

Safron or Orange is the Colour of Sun while Raising & sun setting... And it is the Colour of Fire...
In Hinduism & Buddhism, Fire is Considered as Holy & it's the Symbol of Courage, Strength & Power... It Dissolves everything in it & makes everything equal & pure...

They’re not. Only Theravada. There are more Mahayana Buddhists in the world and our monks wear gray or brown regularly and then yellow for ceremonial purposes. That’s like comparing Catholics to Protestants. Very different.
