    Rice paper, which is super easy to store, can be used to make not only pancakes but also the popular Moon Shrimp Cake.
    \ Food Trivia /
    ・Did you know that Moon Shrimp Cake isn’t originally from Thailand? It was actually invented by Taiwanese as a Thai snack. It’s called Moon Shrimp Cake because it looks like a full moon.
    \ Ingredients /
    ・200g shrimp
    ・2 sheets of rice paper
    ・1/2 egg white
    ・2 tsp rice wine
    ・A pinch of white pepper powder
    ・1/2 tsp salt
    ・1/2 tsp sugar
    ・2 tsp cornstarch
    Sweet Chili Sauce ・5 tbsp white vinegar ・5 tbsp sugar ・1/3 chili pepper ・1 tsp fish sauce
    \ Instructions /
    Slice the chili into small rings.
    Pour white vinegar and sugar into a pot, cook over low heat until the sugar dissolves, then add chili and fish sauce, mix well, turn off the heat, and let it cool.
    Flatten the shrimp with the side of a knife, then chop it into small pieces; don’t chop too finely, leave some texture for a better bite.
    Mix the chopped shrimp with salt, sugar, white pepper powder, rice wine, and egg white, then add cornstarch and mix well.
    Take one sheet of rice paper, spread the shrimp paste evenly, dampen the edges with water, and cover with another sheet of rice paper. Press the edges to seal.
    Heat the pan with oil, cook over medium heat, fry the shrimp cake until one side is golden, then flip and fry the other side until golden.
    \ TIPS /
    ・Don’t cook the sweet chili sauce for too long, or the vinegar will evaporate. Adjust the amount of chili according to your taste.
    ・Don’t chop the shrimp too finely for a better texture.
    ・When frying, use medium heat and a good amount of oil for a tastier result!
