I think it helps stop it from drying out too as it cooks. I could be wrong though. I think the idea is to flatten it a bit before you cook or all the juices will end out coming out of the meat as it cooks making it dry at the end
Meat shrinks as it cooks/heats up. The center of things tend to get less heat and take more time to cook than things on the edge. You see it in cookies, baking with sheet trays, steaks, etc. As the bottom and edges of the meat heat up, they shrink and contract and tend to create a dome. By making the center flatter, the dome sort of gets canceled out and will cook flatter and more evenly by the time you flip it.
