    The superbowl is fast approaching on us and if you are like me, you always have a superbowl party. Usually I stick to tacos, because I like the idea of it being family style and easy to make. This year I will be making my delicious chicken enchiladas with homemade enchilada sauce. Now this is NOT the authentic version. So don’t be a grump and tell me how to ACTUALLY do it, because I already know. This is my version, which is easy and delicious none the less! I know you will love this recipe, because it’s practical for everyone and mouth wateringly (yes I just made that word up) yummy!

    | Ingredients |
    Enchilada Sauce:
    16 oz. Chicken Broth
    1 Teaspoon Ground Cumin
    2 Tablespoons Chili Powder
    ¼ Teaspoon Cayenne Pepper
    2 Cloves of Garlic, Minced
    1 Tablespoon All- Purpose Flour
    1 ¾ Cup Crushed Tomatoes
    Salt and Pepper to Taste
    Enchiladas:
    28 Ounces Red Enchilada Sauce (Store bought or homemade)
    13-16 Small Corn or Flour Tortillas
    3 Boneless Skinless Chicken Breasts, (About 1 lb.)
    2 Cups Mexican Blend Shredded Cheese
    1 Cup Sharp Cheddar Cheese
    1 Medium Onion, Diced
    Salt and Pepper to Taste
    2 Tablespoons Olive Oil
    | Directions |
    Enchilada Sauce:
    In a medium sauce pan over medium- high heat, combine chicken broth, cumin, chili powder, cayenne, garlic, flour, salt, and pepper whisking well to prevent clumps. Simmer gently, until it has reduced by about 25%.
    Add crushed tomatoes, stir well and continue to simmer until it reduces by about 25% once again. ***The longer you simmer it the more concentrated the flavors. However keep in mind that the more you simmer, the less sauce you will have.
    Enchiladas:
    *** If your chicken breasts are really thick, you may want to pound them slightly thinner or cut them in half so it is easier to cook them through.
    In a large nonstick skillet, add olive oil and warm to medium-high heat. Season chicken breasts with salt and pepper on both sides. Add to the pan and cook until the chicken is brown on both sides. Don’t worry about cooking it all the way through at this point.
    Once browned, add onion and cook for a couple minutes until the onion develops some color.
    Pour the enchilada sauce over the chicken and reduce heat to medium. Continue to simmer over medium heat until chicken is thoroughly cooked through and the internal temperature is at 165 Degrees F.
    Remove chicken onto a plate, reserving the enchilada sauce. Shred the chicken with two forks.
    Once shredded, add 2 tablespoons of the enchilada sauce and mix.
    Add a small amount of the enchilada sauce to the bottom of a large lasagna pan.
    Prepare cheese by combining the Mexican cheese blend with the cheddar.
    To assemble enchiladas: Place a small amount of chicken onto the tortilla along with some of the cheese mixture. Roll it up and place seam side down into the pan. Continue until you fill the entire pan. Once pan is filled, pour remaining enchilada sauce over the enchiladas and top with remaining cheese.
    Bake in 375 Degree oven for 15-25 minutes or until warmed through and melted. You may turn the broiler on for 1 minute to get a nice brown top if desired.
    Serve with sour cream and guacamole and enjoy!

    If you fry the tortillas in some oil for a few seconds it helps prevent the tearing. They look great!

    Also to make this receip easier you can boil your chicken instead so you dont have to fry it then shreed. Kinda when I make Tinga chicken we boil it saves time.

      Thank you! It turned out great, except I went a little too crazy with the bread crumbs on the chicken so some parts got a little too burned and presentation was not the best lol. I'll fix that next time I make it. My gf loved it, so thank you!

      +Jennifer Rexer I have tried freezing it before and the texture came out mushy. What I would suggest is to freeze the chicken filling and sauce separately and let them thaw in the fridge a day before you wanna make them. That way you can use fresh tortillas and fresh cheese without worrying about a soggy mess and the majority of your work is done. I hope this helps! Thank you so much for your comment! 😙😙

    OMG! Lady, can you be any more frikken' gorgeous! As part of my job I get to fly to different parts of the country. And when I am not doing that I am jumping out of planes as a volunteer member of the counties Quick Reaction Mountain Fire and Rescue Team. Which drives my husband bonkers each time because he never knows what kind of Hell my team will be dropping into. The three men that I work with are responsible for my safety while I am assessing victims injuries, stabilizing vital signs and communicating with trauma center personnel. My team members have absolutely no fear. But when they tell me to hurry the Hell UP! I know that we are not going to like whatever it is that is coming. So when they bring me home safe my husband expresses his gratefulness by cooking them and their families a huge meal. He made a huge batch of your Chicken Enchiladas and I gotta tell you, Courtney, they were an absolute hit! Not only does my husband lust after you, HA!, he believes that you will be the next "Laura In the Kitchen" So keep teaching and encouraging people. You now have a subscriber for life, Courtney!

      +Dawn Brook Hi Dawn! If you would like to leave the cheese out of the inside of the enchiladas you can. And then just use 1/2 cup - 1 Cup of cheese to top it with. I'm sure it will still taste amazing and you won't have to worry about it being too much. I hope this helps! Thanks for your comment.
