- Made from a pumpkin base and mixed with fall spices, this Pumpkin Bread is moist and pretty much the perfect thing to make in the autumn! Topped with a maple glaze, it's like heaven in edible form!

INGREDIENTS
For the bread:
- 3 1/3 cups flour
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp freshly ground nutmeg (or ½ tsp pre-ground)
- 1 tsp ground ginger
- 2 cups sugar
- 1 cup neutral oil
- 4 large eggs
- 1 15-oz can pumpkin pureé
- 1 tsp vanilla extract
For the maple glaze:
- 1/2 cup powdered sugar sifted
- 1 tbsp milk
- 1 tsp maple extract
-1/2 tsp cinnamon
INSTRUCTIONS
Preheat oven to 350°F.
In a bowl, combine the eggs, pumpkin, oil, sugar, and vanilla. Whisk to combine. Add the flour, baking soda, cinnamon, nutmeg, ground ginger, and salt. Whisk to combine.
Pour batter into two greased 8 1/2 x 4 1/2 loaf pans. Run a greased knife down the center of the loaves to encourage a crack once bake. Bake in preheated oven until browned around the edges and a skewer inserted in the middle comes out clean, 50-60 minutes. Remove from oven and cool in pans for 10 minutes.
While still slightly warm, prepare the glaze by combining the powdered sugar, milk, cinnamon, and maple extract. Whisk until smooth and drizzle over warm loaves. Cool on racks for an additional 15 minutes. Then slice and serve.

I use apple sauce in place of the oil, always moist. Great recipe!

My first time on the WG channel. I just have to say . . I had the best time ever making this bread along with Wyse Guide (sorry - I don't know his name). I had basically all the ingredients ready and was looking for a cooking vid to follow. Now, in order to keep up with him - I decided to slow down the playback speed to 50% . . . which gave me the equivalent of 'cooking with DRUNK 'Wyse Guide' . . . I even had to pour myself a glass of wine to 'keep up'. I'm gonna do this now every time I wanna follow a recipe on RUclips. Thanks for the gr8 recipe. It's still in the oven btw . . smells gr8 though. I used monkfruit sugar, date syrup, GF flour and added dates & walnuts
This was in my recommendations and I am intrigued. I will be checking out more.

I make mine the same way but for the glaze that sounds great. Only thing I have one big pan and two small. Great gifts and to freeze

Yum ... reminds me of my mom - she loved pumpkin loaf - we sometimes would add pumkin seeds to the top - gives it a bit of crunch !!! thanks for inspiring me to get in my kitchen and bake !!!!

Love that he didn't edit out the glaze dripping and the less than clean cut on the loaf. Working in the kitchen isn't clean or perfect, its often messy and sometimes there are problems. In the end its about the satisfaction of making something that you and others can enjoy. Recipe seemed simple enough; worth trying.

Hi.can you easily sub out some of the oil for applesauce?
I made this loaf recipe. The oil was a bit much- are you using the bread to treat constipation with a cup of oil?, so I played with recipe and havent quite gotten a balance without 1 cup of oil.
I will say the type of oil uses maked a difference. Try pumpkin sead oil cut into a lighter like grapeseed. Walnut oil would be good too and pure peanut oil.
Also, to those who are wondering why he grabs the loaf with his hand to pull it out? Ill tell you why....He didn't want to scratch his loaf pan trying to dig it out and since its a bread it will pop out with a tug
Why you not use a baking powder? And pumpkin spice?

And if the cakes themselves are rubbish I’m making them again cos the mixture is divine!!! Can’t stop licking it. I have added 5 chunks of stem ginger as I love it. We shall see, I’ll report back. Well I added stem ginger to it and it’s nice but not scrumptious. Way too much salt too. Might try it with butter on today.
