I just prefer how the icons looked from 2014-2018 because they still look recognizable from the change from skeuomorphism. Big Sur's icons look as if Apple had an iOS app shape fetish.
Well to be fair macOS 11 is heavily inspired by iOS 14 in so many ways and the icon change is really just another example of it. They clearly tried to distance it from the previous OS X / macOS 10 with these new icons and I personally really like them
coming from a new mac user when macos11 just came out, it helped me a lot since so many things were similar from ios, and it only took me a few days to learn the system. If I got catalina, I would have taken me a lot longer to learn.
I do agree though, that the catalina icons are more aesthetically pleasing, but I think big sur was just for new users. They should make an option to go back tbh
I like how for Automator they made a completely new design, then with Home, Apple just went "Frick it, throw the existing logo in that thing we have a patent on..."
Even though a lot of people say that they preferred the older ones, I think that the MacOS Catalina icons looked too bland. The new shadow effects and rounded corners make MacOS Big Sur look a lot nicer and more modern.
I can see why you'd like the design of OS X Lion, but dude that hasn' been updated in more than 10 years old you're probably very vulnerable to cyberattacks and you will probably get a lot of compatibility issues soon. There's some graphic shells that can be installed on modern MacOS that make it look like older versions such as Lion or even Cheetah if you really want the design

These new icons grew on me. I like that that some of them still go out of the rounded square and that they are still mostly skeuomorphic

I absolutely love the Big Sur icons they are my favorite icons for macOS
