I made this using Hot Honey and have the batter and regular honey on the other half. I fried the Hot Honey slices last so that the heat didn't affect the other version. Both were super delicious - i really loved the Hot Honey version.

Hi I'm from Netherlands, I ate this lotu roots in a restaurant with my Indian family in new Delhi.
I have now bought the lotus root in the asian store here in the Netherlands.
These contain a lot of moisture......( and sugar ) so when I deep fry them, they quickly become dark brown and in my opinion do not lose enough moisture to become completely crisp.
The taste is OK but the texture is too soft.
Do you have any advice on how to make this?
